Today is National Fudge Day which honors a delicious sweet and rich candy. The most popular flavor is the original chocolate. although it does come in many other flavors. Some popular ones are peanut butter, Oreo, marshmallow, nut, maple, and rocky road. Fudge tends to be cut into small squares and has a smooth , soft texture.
The first documented fudge was in 1886 in a letter from a Vassar College student, in it she discussed the sweet confection that her cousin had made and sold in Baltimore, Maryland. In the late 19th century shops on Mackinac Island, Michigan began to sell fudge. It is still sold today in some of theses original shops. Many other fudge recipes were created and sold during the late 19th century.
Celebrate today by ordering some fudge from a local candy shop or make your own at home. This classic American treat is made out of three ingredients, sugar, milk and butter. Add some tasty ingredients like chocolate chips, nuts, or fruit to create a unique flavor. Today is the perfect excuse to indulge in this decadent treat!

I do like fudge as well as chocolate candy. It always makes me think of DDIL#3 who happens to love fudge. She has a particular fondness for it. On one of their vacations they did visit Michigan and she fell in love with all the fudge shoppes there. I don’t have any pictures of fudge today. so I’m showing pictures of some sun flowers I’m slowly adding into my summer decor here around the house.
Fudge is very rich and I only need a one small piece at at time to satisfy my craving for it. So maybe today is a good day to celebrate and have a piece for dessert tonight.
On the menu today is
Grilled Beef Mushroom Burgers
Makes 8 servings
1 lb. mushrooms, halved if large
3 tbsp olive oil, divided
3 tbsp sherry vinegar, divided
2 1/2 tsp paprika, divided
2 tsp garlic powder
1/8 tsp saltplus 1/2 tsp, divided
pinch of sugar
2 cups sliced cucumbers
6 tbsp. mayonaise
2 tsp tomato paste
2 lbs lean ground beef
8 oz. piquillo or Padroin peppers
6 oz. thinly slice Manchengo cheese
8 brioche buns, split and toasted
Greens, red onion and tomato for serving
In batches pulse mushrooms in a food processor, scraping down sthe sides once or twice, until finely chopped.
Heat 2 tbsp. oil in large pot over medium high heat. Add the mushrooms and cook, stirring occasionally. until browned and liquid evaporated. Add 4 tbsp. vinegar, 2 tsp. paprika and garlic powder. Cook stirring for 3 minutes. Scrape into a large bowl and spread into a thin layer. Let cool for 10 minutes.
Meanwhile, combine remaining 1 tbsp. vinegar, 1/8 tsp salt, and sugar in a small bowl. Add Cucumbers and toss to combine. Combine mayonaise, tomato paste and the remaining 1/2 tsp paprika in a small bowl. Set Cucumbers and mayonaise mixture aside
Preheat grill to medium high. Add beef and remaining 1/2 tsp. salt to the muschrooms. Mix well. Form into 8 equal patties, about 4 inches in diameter. Toss peppers with remaining 2 tbsp. oil in a medium bowl. Transfer to a grill basket.
Oil the grill rack. Grill the burgers, flipping once until a meat thermometer inserted the thickest part registers 165 degrees. 5 to 8 minutes total. Grill peppers, stirring occasionally until browned.
Top burgers with cheese and cook until melted. Serve burgers on buns with greens, onion tomato and the peppers and cucumbers and mayonnaise mixture.
I won’t grill the peppers as I like my food mild. They will be fine without them. I didn’t have the Mangengo cheese so I used mozzarella instead.qu I will also be cutting the recipe in half. 8 burgers are to much to have on hand for just me.

ADVICE FOR TODAY
Making fudge is a good muscle workout, you have to rely on your instincts, people love it and hey if you use bitter sweet chocolate chips a piece could be good for you.

Those beef mushroom burgers sure sound good! Nice menu for the week too Ma. Now I just might be craving a little piece of chocolate fudge.
What an interesting combo -- mushrooms, cukes and that mayo mixture. Yum! OK if I take some of your peppers? (*smile*) Summer time fare is here!
