Today is National Chocolate Pudding Day, which honors a dessert that can be traced all the way back to the 17th century. During that time, a pudding was actually a very moist cake similar to modern day bread pudding or plum pudding.
The sweet and creamy confection we know and love today emerged in the mid 19th century when English chemist named Alfred Bird developed and egg free custard powder. The remarkable invention make it easy to produce a delicious pudding with the perfect consistency. Today pudding is a popular dessert all over the world.
To celebrate today, make your own chocolate pudding for dessert tonight.

There is no doubt that I love chocolate and I love desserts so I will definitely be celebrating today. I think I have some packages of the instant variety, if not I know how to mix up my own.
Pudding is a quick and easy dessert and I made it often when the babes were all home. They loved it topped with some whipped cream.
It’s Saturday and my day to cook for the weekend and on the menu besides dessert is:
Creamy Florentine Chicken
Makes 4 servings
2 tbsp. olive oil, divided
1 pound chicken breast, thinly sliced
1 tsp salt, divided
1/2 tsp pepper, divided
1/4 cup finely chopped shallots
2 large cloves garlic, minced’
1/2 cup apple juice
1 lb. baby spinach
1/2 cup heavy cream
2 tsp cornstarch
Heat 2 tbsp. oil in a large skillet over medium high heat. Season chicken with 1/4 tsp each salt and pepper. Add to the pan and cook, turning once , until just cooked through, 5 to 7 minutes. Transfer to a plate and tent with foil to keep warm.
Reduce heat to medium. Add remaining tablespoon of oil , shallots and garlic to the pan. Cook stirring until fragrant. Add juice, scaping up any browned bits . Add spinach in batches and cook stirring often, until wilted. Whisk cream, cornstarch, and remaining salt and pepper in a measuring cup. Stir into the spinach and cook until thickened. Serve with the chicken.
I’’m cheating today and using a box of frozen creamed spinach I happen to have in the freezer. Also the original recipe called for dry white wine and not apple juice, but I rarely have wine on hand so apple juice is a good substitute.
I’ll be having this with a side of wild rice and berry vinaigrette tomatoes and some crusty bread to dip in that creamy sauce.

Pudding ... the ultimate comfort food! I remember going to Furr's Cafeteria with my parents and seeing the pretty rows of chocolate pudding with whipped cream behind the glass.
We're having chicken breasts today, too!
