Today is also International Picnic Day which is considered one of the greatest ways to enjoy the summer season.
During the Victorian era, Picnics were very important social occasions. They offered the opportunity for young men and women to spend time together in the great outdoors. They were quite elaborate. A picnic for twenty people might feature cold salmon, lamb, veal, chicken, ham, pigeon pie, sandwiches, fruit, a selection of cheeses, and a variety of baked goods. the modern day picnic is much less complicated . In fact, the phrase, It’s a picnic, means, it’s easy.
To celebrate today plan a picnic for your family and enjoy an al fresco meal in the company of your loved ones. Enjoy !

This son and daughters birthdays are on the same day but two years apart. When they were little it was like raising twins. They did everything together and were very close.
I don’t think I’ll be seeing either of them today, but have sent the usual card in the mail with lots of love and birthday wishes. I’ll be lighting my birthday candle and thinking of both of them.
There will be no picnics at my house today, all my family are busy doing other things, but I do have one planned with two of my friends coming up next month. We set the date when we got together this week. The community I live in has some wonderful picnic pavilions with tables and even a place to cook outdoors. We’re going to do hot dogs on the grill and each one of us will be bringing something to have with them.
A while back I painted picnic baskets for all in my family for Christmas and that is what the pictures are of today. They got to choose what they wanted painted on their basket. So some are the same and some are different.
We enjoyed a lot of picnics when they were children, and I figured a picnic basket would be something they would all enjoy. When you have a large family you look for things to do that don’t cost a lot of money and we had a lat of parks nearby to go to and have a picnic outdoors.It didn’t cost a cent and provided hours of enjoyment.
However, on the menu today is :
Easy Spicy Salmon Cakes
Makes 4 servings
1 1/2 cups flaked cooked salmon
2 eggs lightly beaten
1/4 cup finely chopped red onion
1/4 cup chopped fresh cilantro
1 tbsp. Chile sauce
2 tbsp. soy sauce
1 tbsp.Chinese five spice powder
1 cu whole wheat breadcrumbs
1/4 cup olive oil
Combine salmon, eggs, onion, cilantro, chile aauce, soy sauce, and the 5 spice powder in a large bowl. Fold in breadcrumbs. Form into 4 three inch wide patties
Heat oil in a medium nonstick skillet over medium high heat. Add the salmon cakes and cook turning once, until browned on both sides. 4 to 6 minutes.
I didn’t have the 5 spice powder on hand so I looked it up so I could make my own:
5 Spice Powder
Makes 1/4 cup
2 tsp.Sichuan peppercorns
5 to 6 whole star anise
1/2 tsp ground cloves
1 tbsp. ground cinnamon
1 tsp. ground fennel
In a skillet toast the peppercorns by shaking the pan over low to medium heat until the aroma is released.
Grind the toasted peppercorns and star anise in a blender, peppermill, or spice grinder.
Pass the blended seasonings through a fine mesh strainer. Mix in the ground cloves, cinnamon, and fennel.
Place the mixture into a blender mill, or spice grinder and grind until very fine. Store in an airtight container and keep in a dark cool space until used.
I’ll be looking for this in the store, but if I can’t find it I know how to make my own.

I love having a double celebration today. The rain is pouring down so definitely no picnics outdoors.

Happy Birthday to your DD and DS#3! I love those picnic baskets. They're so pretty and could actually be used as an accessory item. We're supposed to have a 100% chance of rain tomorrow. I hope yours clears up and you have a super weekend!
