Today is Peanut Butter Cookie Day which celebrates the only cookie day in June. This day allows cookie lovers and peanut butter lovers to step away from pies and cakes and indulge in a little peanut butter and cookie therapy.
Alabamas American agricultural extension educator, George Washington Carver promoted the peanut extensively. Well known for his promotions, Carver compiled 105 peanut recipes. In 1916 he created a research bulletin called, How to grow the peanut and 105 ways of preparing it for human consception. However peanut butter cookies were not one of them.
It was in the early 1920’s peanut better began to be listed as an ingredient in cookies. The peanut butter we know and love today didn’t become commercially available until in 1922 when Joseph Rosefield kept the peanut oil from separating from the solid by the process of homogenization. He sold it to a company that begin making peanut butter called Peter Pan.
No one knows why we press crisscrossed fork marks into our peanut better cookies, However homemade peanut butter cookies would just not be the same without them.
The best way to celebrate is with homemade peanut butter cookies , a glass of milk and a friend. or you can visit your favorite baker and give them a shout out too. Let them know how much you appreciate their cookie baking skills.

Cookies are the sweetest little bit of comfort food. They are vary bite sized and personal.

I love cookies of all sorts and do like peanut butter cookies very well. I like to think that since they have something healthy in them, maybe they are healthier to eat than others might be.
Peanut butter is good and good for us too.
Today is Friday and on my menu is:
Crispy Fish and Chips
Makes 4 servings
4 cups frozen steak fries
4 salmon fillets
1 to 2 tbsp. prepared horseradish
1 tbsp grated Parmesan cheese
1 tbsp. Worcestershire sauce
1 tsp Dijon mustard
1/4 tsp salt
1/2 cup whole wheat bread crumbs
Cooking spray
Preheat oven to 450 degres. Arrange steak fires in a single layer on baking sheed . Bake on lowest rack 15 to 20 minutes until golden brown.
Meanwhile place salmon a foil lined baking sheet coated with cooking spray. In a small bowl, mix horseradish, cheese, Worcestershire sauce, mustard and salt. Stir in breadcrumbs.
Press mixture onto fillets. Spritz tops with cooking spray. Bake
Salmon on middle oven rack 8 to 10 minutes or until fish just begins to flake easily with a fork. Serve with fries.
I like to spritz my fish with a little lemon juice before eating. It takes away the fishy taste.
They say today we’ll be cooling off just a little and will be in the upper 70’s or low 80’s now through the weekend. This is my favorite kind of temperatures. Not too hot and not too cold

Cookie therapy sounds wonderful right about now (JIF extra-crunchy is one of my favorite things in the world), but I'm trying a 90-day keto challenge so salmon it is! Minus the fries, that is. The horseradish sauce sounds different, but really good!
