Today is Eat Your Vegetables Day which is a day to remember how your parents used to tell you to eat your vegetables. They were right, vegetables are essential for living a long healthy life and they are also delicious. There is a steady rise in the numbers of Americans that grow their own vegetables. The most popular crops are tomatoes, cucumbers sweet peppers and beans.
There are many ways to celebrate today. Swap your junk food snack for fresh vegetables, make a big salad for your family tonight, or become a vegetarian for the whole day. Enjoy!

I love most vegetables, there are very few I don’t like. They are a steady part of my diet and I eat a lot of them. Thanks to our grocery stores, most any kind of vegetable is available all year long. The produce section is full of fresh ones and then we have canned and frozen too.
Our diets cannot be all meat and potatoes. We need a well rounded amount of vegetables to stay healthy.
A diet rich in vegetables and fruits can lower blood pressure, reduce the risk of heart diseases and stroke, prevent some types of cancer and lower risk of eye and digestive problems. They have positive effect upon blood sugar, which can help keep the appetite in check.
Vegetables can be raw or cooked and they can be fresh frozen, canned or dehydrated. This offers a wide variety of opportunities for meeting the daily intake recommendations.
They say someone my age should have 2.5 cups of vegetables each day. They are low in calories and carbs and rich in fiber, vitamins and minerals and disease fighting phytochemicals.They are an excellent source of antioxidants that help neutralize free radicals, preventing damage and inflammation which contributes to heart disease and diabetes. The best bet is to eat a rainbow color of vegetables to obtain an array of nutrients.
The healthiest vegetables on earth are: spinach, carrots, brocolli, garlic, brussel sprouts, kale, green peas, swiss chard, ginger, asparagus, red cabbage, sweet potatoes, collard greens, and Kohlrobi.
Try to ensure you’re getting a good mix of vegetables in your diet to take advantage of the many diverse benefits. and get the most for your buck.

Veggies are the best, I love them!
I love veggies -- both steamed and raw! My supper last night was yellow squash (raw) with baby mozarella and walnuts. Plus, I discovered the dogs love raw squash, and it's good for them. Yay!
Never heard of Kohlrobi, so I need to Google that one.
