Today is also World Environment day which is an annual event organized by the United Nations. The purpose is to help spread awareness about important environmental issues and to encourage people to take positive action.
This holiday has been celebrated since 1972. The international festivities take place in a different host city each year and the program is always based on a specific theme.
To celebrate get involved. Find a way to make a difference and help preserve the earth and all the resources.
If you can't see the bright side, polish the dull side

This grandson died at the age of 2 from SIDs. Sudden infant death. He is truly missed by all of us, but never forgotten. So I’m remembering him today with loving thoughts and lighting my birthday candle.
Our environment is all about the world around us and my environment is family friendly. I want my grandchildren to be able to enjoy the great outdoors in years to come.
One thing that is on my mind is recyclables. A friend of mine and I were recently talking about all the space our landfills are using and how many disposable diapers are filling them up. I did my part when my children were young and used the kind of cloth diapers I could wash over and over. The were used until they become holely and then we used them for cleaning rags. I miss having some of those these days, they made the best kind of rags to do cleaning with.
So we need to think about how to recycle things and not keep filling up land fills. We don’t have that much space to waste.
Today is my day to cook for the weekend and on the menu is:
Caprese Chicken with Bacon
Makes 4 servings
8 bacon strips
4boneless skinless chicken breast halves
1 tbsp. olive oil
1/2 tsp salt
1/4 tsp pepper
2 plum tomatoes, sliced
6 fresh basil leaves, thinly sliced
4 slices mozzarella cheese
Preheat oven to 400 degrees. Place bacon in an uncreased baking pan. Bake until partially cooked but not crisp. Remove to paper towels to drain.
Place chicken in a 13 by 9 baking pain brush with oil and sprinkle with salt and pepper. Top with tomatoes and basil. Wrap each in 2 bacon strips, Arranging bacon in a crisscross. Bake uncovered until a thermometer reads 165. Top with cheese, bake until melted.
. We are to be 30 degrees warmer today that we were last Saturday. Summer weather has arrived. We can only hope it doesn’t get cold again.

This is a bittersweet day for me, but I'l be celebrating the life of our little pumpkin.
I was just going to say, bittersweet. I'll never forget the heartbreak when one of my coworkers lost his 8 month old son to SIDS.
Your Caprese Chicken sounds really good. I'm cooking up a big skillet of bacon and fresh spinach right now, but will be saving this recipe for sure.
PS - Ha! I don't think disposable diapers were a thing when my son was born. I'll never forget that VILE 'aroma' any time I had to open the diaper pail. 😝
