Today is Paul Bunyan day which honors one of the most well known heroes in American folklore. This legendary lumberjack and his faithful companion, Babe the Blue Ox starred in many of the tall tales told in the Midwest during the 1800’s. According to the stories, Bunyan was a huge man with an amazing amount of physical strength. He single handedly found the logging industry, cut down whole forests in North Dakota, created Lake Superior with his bare hands, and even trained carpenter ants to help him with his tasks.
A young woman named K. Bernice Stewart was the first person to document the original Bunyan tall tales. While studying at the University of Wisconsin in 1914, she gathered the stories from local loggers. Today Bunyan is mentioned in more than 1,000 books and has become one of the most widespread icons in American culture.
To celebrate today read one of the original Bunyan tales!

Folklore used to be passed by word of mouth, from one generation to the next; that what makes if folklore, as opposed to say, history, which is written down and stored in an archive.

I love folktales and think they do a lot of good to tell about the history of our coontry. People passed around the stories and as they were passed along the tales grew to tremendous proportions. Paul Bunyan was like a super hero in modern times.
We know that everything they do is not possible, but still we like to believe in them.
It’s Monday again and once again time for me to cook up something new and on the menu is:
Mom’s Spanish Rice
1 lb. lean ground beef
1 onion, chopped
1 medium green pepper
1 can 15 oz. tomato sauce
1 can 14 1/2 oz. diced tomatoes, drained
1 tsp.1 tsp chili powder
1/2 tsp. garlic powder
1/4 tsp. salt
2 2/3 cups cooked brown rice
Chopped green onions
In a large skillet, cook beef, onion, pepper over over medium heat, until beef is no longer pink and onion is tender, breaking up beef into crumbles.
Stir in tomato sauce, tomatoes and seasonings, bring to a boil. Add rice, heat through, stirring occassionally. Garnish with green onions if desired.
This is good served with fajitas, enchiladas and burritos. I used to make mine when I had tacos.Today, I think I’ll have it with a side salad
This is not my original recipe but one that is a little healthier for us.

As a young girl, Paul Bunyon and Babe were some of my favorite reads. Super heroes, indeed! Tom loves Spanish rice, but being he's the only one, he buys the 'just add boiling water' box version.
