Today is Groundhog Day which has been celebrated for centuries. According to folklore, if the groundhog emerges from hibernation and does not see his shadow he will leave his burrow. This signifies that the end of winter near. On the other hand if the groundhog does see his shadow, he will retreat back into his burrow and winter will continue for at least another 6 weeks.
This day is deeply rooted in ancient weather lore. February 2nd is one of the four cross quarters r days, the midpoints between solstices and eqinoxes. February 2nd, its also known as Imbolic or Candlemas; it is exactly halfway between the winter solstice and the spring equinox.
One of the earliest refrences to predicting weather on this day can be found in an old English song: If Candlemas be fair and bright, Come, Winter have another fight. If Candlemas brings clouds and rain, Go winter and come not again.
Punsutawney Phil has been making predictions since 1886, if the groundhog does not see his shadow today, we will have an early Soring!! Happy Goundhogs Day !

I haven’t heard any groundhog predictions yet this morning, but I know we’re all tired of winter at this point and hoping for an early spring. A winter storm is moving in here, bringing with it lots of snow. Bur early on today we’re to have rain. I’m hopefully going to get out and get groceries before the snow moves in .
It’s my day to make up my grocery list and also a new menu for next week. On the menu is:
Monday - Slow Cooker Minestrone Soup
Wednesday- Skillet Ravioli Lasagna
Friday - One Pot Mac and Cheese with Cauliflower and Brussels Sprouts
Weekend - One Skillet Chicken Paprikas with Mushrooms
And on the menu for today is:
Honey Chicken Stir Fry
makes 4 servings
2 tsp. cornstarch
1 Tbsp. cold water
3 tsp. olive oil, divided
1 lb. bonesless, skinless chicken breasts cut into 1 inch pieces
1 garlic clove, minced
3 Tbsp. honey
2 Tbsp. soy sauce
1/8 tsp. salt
1/8 tsp pepper
1 package frozen broccoli, stir fry vegetable blend
Hot cooked rice, optional
Mix cornstarch and water until smooth. In a large nonstick skillet heat 2 tsp oil over medium high heat; stir fry chicken and garlic 1 minute. Add honey, soy sauce, salt and pepper; cook 3 minutes more.Remove from pan
In same pan stir fry vegetable blend in remaining oil, just until tender. Return chicken to pan. Stir cornstarch mixture and add to pan; Bring to a boil. Cook and stir until thickened Serve with rice if desired.
This is a very quick and tasty dish.
Keep dry, warm and safe, freezing rain may be headed our way before the snow arrives.
