Today is National Chocolate Covered Nuts Day which celebrates nuts that have been a staple of the human diet for thousands of years. The ancient Greeks and Romans were fond of the walnut, Native Americans enjoyed the pecan, and the Chinese believed the hazelnut was one of the five sacred nourishments. People also believed chocolate had divine properties.
The Aztecs and the Mayans prepared drinking chocolate for all their sacred rituals. In the 17th century chocolate became a very fashionable drink throughout Europe and people soon learned that everything tastes better when it’s covered in chocolate. By the middle of the 19th century it was a common practice to dip items like pretzels, nuts and fruits into melted chocolate.
Celebrate today with you’re favorite chocolate and nut combination.

Nuts about chocolate? Yes, I confess I am.

My favorite chocolate nut combination would have to be something called Nut Mallow I found at one of our local candy stores. Sadly, they went out of business, so I can’t get it any more. But I could make my own. So I decided to share the recipe with you all today:
Nut Mallow
1 lb. milk or dark chocolate, melted
1 bag small marshmallows
1 cup chopped walnuts
Line a 8 inch square pan with waxed paper. With small marshmallows.Cover bottom of pan. Then sprinkle with chopped nuts over marshmallows. Spoon or pour melted chocolate over top. Mix with a fork until all is covered. Refrigerate and cut into squares just before serving
I’ll be using a bag of melted chocolate chips to make mine.
Today is also my day to cook a new recipe and on the menu is:
Stir Fried Scallops and Asparagus
makes 4 servings
1 pkg chicken ramen noodles
1 Tbsp olive oil
1 lb fresh asparagus, trimmed and cut into 1 inch pieces
1 medium sweet pepper, julienned
3 green onions, sliced thinly
1 garlic clove, minced
1 lb. sea scallops, halved horizontally
1 Tbsp lime juice
2 Tbsp. soy sauce
1 tsp. sesame oil
1/4 tsp hot pepper sauce
Discard seasoning package from ramen noodles. Cook noodles according to package directions. Keep warm
Meanwhile in a nonstick skillet or wok, heat oil over medium high heat. Stir fry asparagus and red pepper until vegetables are tender. Add green onions and garlic, stir fry one minute longer. Add scallops. Stir fry until scallops are firm and opaque, about 3 minutes.
Combine lime juice and soy sauce, sesame oil and hot pepper sauce and stir into skillet. Serve with Ramen noodles.
I don’t have any Ramen noodles here so will use spaghetti noodles instead.
I’ve got an appointment to have my eyes checked today, so even though it’s cold and somewhat snowy, I’ll have to get out and about. I’m not looking forward to it, but it’s not very far away.

What’s New at My House

Chocolate and nuts are both good and good for us.
Yummy! The only thing I put my chopped walnuts on these days is either salad or hamburger.
I'm not a big fan or sweets but I'd take that stir fried scallops and asparagus dish any time - yum! Be careful out there when you go to your eye appointment today.
