Today is Peppermint Patty Day which celebrates a tasty confection made with a rich, creamy peppermint filling covered in semisweet chocolate. The York Cone Company which was based in Pennsyvania and originally produced ice cream cones, invented the York Peppermint Pattie in 1940.Unlike the existing chocolate covered peppermint candies, Your’s product was firm and crisp.It soon became the premier candy of its kind.
Peppermint patties also gained notoriety after the debut Peanuts. Charles M. Schultz’s famous comic strip in 1966. One of the main characters was Patricia ‘Peppermint Patty’ Reichardt.
Celebrate today and enjoy a minty refreshing dark chocolate patty!

You can’t explain anything to Peppermint Patty, because you never get a chance to say anything.

I don’t happen to have any peppermint patties today to enjoy, The only thing minty i have is Chocolate Chip Mint Ice Cream so I guess it will have to do.
I do like peppermint patties and need to pick up some soon. They are very refreshing especially after a rich and filling dinner. They help settle the stomach like an after dinner mint.
Mint has long been known as a herbal rememdy, easing queasy stomachs, calming stress and anxiety and promoting restful sleep. So it not only taste good but is good for you too.
Every Friday, I make something new for dinner and on today’s menu is:
One Pot Mac and Cheese with Cauliflower and Brussels Sprouts
Makes 4 servings
4 Tbsp. butter, one half stick
1/4 cup flour
2 cups milk
2 1/2 cups shredded sharp Cheddar cheese
1/3 cup grated Parmesan cheese
1/2 tsp. salt
8 oz. whole wheat rotini or rigatoni
8 oz.Brussels sprouts, trimmed and halved or quartered if large
3 cups cauliflower florets, cut in 1 inch pieces
! Tbsp olive oil
3 cloves garlic, minced
1/4 tsp salt
To prepare cheese sauce: melt butter in a pan over medium heat .Add flour and whisk constantly until thickened. Slowly add milk,whisking constantly. Cook stirring often until the mixture is thick enough to coat the back of a spoon. Remove from heat and, a handful at a time , whisk in Cheddar and Parmesan until smooth. Stir in 1/2 tsp salt. Reserve 1 1/2 cups for another use.
Meanwhile prepare pasta and vegetables. Bring a large of pot of water to a boil. Add pasta and cook for 4 minutes less than package directions. Stir in the Brussels sprouts and cauliflower and continue cooking until the pasta and vegetables are tender. Drain well.
Add oil and garlic to the same pot and cook until garlic is fragrant, and just starting to brown. Add the hot pasta and vegetables and stir to combine. Add 2 1/2 cups of cheese sauce and salt. Reduce heat to medium low and stir until steaming hot. Do not boil.
This recipe was designed to make extra cheese sauce for use another time. If you’d rather use it for just this recipe simply cut the sauce ingredients in half. The added veggies makes it a much healthier mac and chesse

I never considered Peppermint Patty having a last name! (*grin*)
Those York patties were always my 'go to' treat at the movie theater. I don't think I've tasted one since 1968!
