Today is National Almond Day which celebrates one of the most heart healthy foods on the market. These delicious and wholesome nuts are full of vitamin E. magnesium, and fiber and can help lower cholesterol.
The almond tree is native to the Middle East and South Asia. It produces a flesh green fruit similar to a peach or apricot. At the center of this fruit is a stone like seed, which is the almond nut. Today, the state of California produces 80 percent of the worlds supply of almonds. It takes more that 1.2 million beehives to pollinate all the crops.
Whether you enjoy them plain, roasted, or paired with chocolate, celebrate today with a handful of delicious almonds.

Almonds are good and good for us too. The only ones I have here today, are in a can of mixed nuts. I eat them roasted.. But they are good anyway you have them. I also like them paired with chocolate in a candy bar. Almond Joys are one of my favorites. I’ll be sure to pick one up when I go to the store today in order to celebrate.
It’s Wednesday and my day to make up a new menu for the week to do my shopping from.
On the menu for next week will be:
Monday: Brown Rice Mulligatawny
Wednesday:Vegetabe and Beef Stuffed Red Peppers
Friday: Stir Fried Scallops and Asparagus
Weekend - Maple Dijon Chicken
On the menu for today is:
Slow Cooker Split Pea Soup
1 pkg. dried green split peas, rinsed
2 cups fully cooked ham
1 onion, chopped
1 cup carrots, chopped
3 cloves garlic, minced
1/2 tsp. dried rosemary, crushed
1/2 tsp. dried thyme
1 carton, 32 oz. chicken broth
2 cups water
In a slow cooker, combine all ingredients. Cover and cook on low for 8 hours or until peas are tender..
For a slightly thicker soup, remove about a cup of cooked soup, blend until smooth and then it add it back to the pot.
I’ll be having this soup with some good crusty bread for dunking. It would also be good with grilled cheese sandwiches.

Almonds are good and good for you too!
For years, I used to keep a small can of roasted almonds in my desk drawer at work -- to stave off hunger, boredom. Even as a quick pick-me-up mid-afternoon. Loved the variety!
Tom refuses to eat peas in any form, but split pea soup is soooo good. I've never tried making my own, but I'm writing this recipe down now. Since I splurged on the pyrex containers, there's no reason I can't make the batch for myself and freeze the rest! Thanks!
