ON THE BRIGHT SIDE
SATURDAY,FEBRUARY 5TH, 2022
The moments our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Today is National Chocolate Fondue Day which celebrates a delightful chocolate dessert.
The word fondue is derived from the French word, fonder, which means to melt. The dish originated in 19th century Switzerland as a way use up hardened cheese It became popular for dinner parties in the 1950’s but the chocolate dessert version didn’t emerge until the 1960’s .
Chocolate fondue is traditional a wonderful centerpiece for a party.Traditional dippers include fresh fruits such as strawberries, small pieces of cookie or cake and miscellaneous goodies like marshmallows and pretzels.
To celebrate, enjoy a chocolate fondue for dessert tonight !
If you can't see the bright side, polish the dull side
THOUGHT FOR TODAY
Absence makes the heart grow fondue.

Fondue is easy to make by melting some chocolate in your crockpot, although I used to have a fondue pot it is now long gone. I do love chocolate covered strawberries so this is one dessert I’d love to have.
It’s an old fashioned thing that seems to be making a comeback these days. Some people can make a whole dinner in their fondue pots,
I’ve no pictures or recipes for Fondue today but on the menu is:
One Skillet Chicken Paprikas with Mushrooms
Makes 4 servings
1 lb. chicken cutlets
1/2 tsp salt, divided
1/4 tsp pepper
2 Tbsp, olive oil, divided
1 onion, halved and sliced
8 oz. white mushrooms, sliced
4 tsp paprika
1/4 tsp. crushed red pepper
1/2 cup chicken broth
1/2 cup sour cream
Chapped parsley for garnish
Sprinkle chicken with 1/4 tsp each salt and pepper. Heat 1 Tbsp. oil in a large skillet over medium heat. Add the chicken and cook, turning once, until browned and thermometer inserted into the thickest part registers 165 degrees. Transfer to a plate and cover to keep warm.
Add the remaining oil and onion to the skillet. Cook stirring until the onion is soft and lightly browned. Add mushrooms and cook, Add paprika, crushed red pepper and remaining tsp. of salt. Cook, stirring for 1 minute . Whisk broth and sour cream , add to the pan. Bring to a boil and simmer and cook until flavors have melded and sauce has thickened. Add the chicken and cook until heated through, Garnish with parsley if desired.
I like to let my chicken simmer in the sauce for about 20 minutes. This gives it a lot of flavor. I also cook some wide noodles and let them simmer with the chicken and sauce. This not my usual paprikas recipe but supposed to be healthier.
I hope you all have a SUPER Saturday!!

It's only 10 degrees here this morning and we got more snow overnight. Which makes our total snow fall for our area is 12 inches.
Dinner sounds delicious and now I'm craving some fondue! I'm sorry to hear it's still snowing there. Stay safe and warm Ma!
Did you know, I've been thinking about getting a fondue set?! Considering the fact I had one in the 70's that was used only once or twice, I don't know how wise I'm being. Perhaps I need to wait and give myself a little while, like a cooling off period. If I do, there's a good chance I'll blog about it. 😋
