Today is Lincoln’s Birthday, which celebrates his birth on February 12th, 1809. This Kentucky born Civil Rights Activist is considered one of Americas’s greatest heroes. He began with humble beginnings, rising up to claim the nation’s highest office.
His tragic death in 1865 came at a time when Americans needed him the most.
His birthday is observed as a legal holiday in many US states including CA, CT, NY ant morel The earliest recorded observance of this great man’s birthday was in 1874,initiated by a pharmacist in Buffalo, NY.
To honor him, there is an annual wreath laying ceremony at the Lincoln Memorial in Washington D.C. As part of the bicentennial celebration, the US Mint released four new pennies featuring stages of Lincoln’s life — his log cabin birthplace, reading as young man while taking a break from log splitting, as a legislator in front of the Illinois Capitol building, and finally the partial built dome of the US Capitol building.
Lincoln was known as honest Abe and the Great Emancipator — two titles he fully lived up to during his political career. He maintained the Union during the US Civil War and allowed for the emancipation of many slaves.
Celebrate his great life today by learning more of his life, pick up one of many books dedicated to him or watch the 2012 epic historic drama.

To me President Lincoln was the best President we ever had. His works brought us to a better life. In Ohio we celebrate his birthday along with all the other President’s on President’s Day.. We no longer have his birthday as a state holiday, although we still celebrate Washington’s birthday.
We used to get a day off from school, but not anymore. Yet I still remember his birthday and honor him.
Today is my day to cook up something for the weekend, and as I stated previously had to revise my original menu. So for today I’ m making:
Skillet Ravioli Lasagna
Makes 6 servings
1 24 oz package frozen or refrigerated cheese ravioli
1 lb. lean ground beef
1 1/2 tsp. dried oregano
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp ground pepper
1 28 oz can crushed tomatoes
1/4 cup chopped fresh basil
8 oz. grated mozzarella, divided
Preheat broiler. Bring a large pot of water to boil. Cook ravioli according to package directions. Drain and set aside.
Meanwhile cook ground beef in a large cast iron or oven safe skillet, over medium high heat until cooked through.Use the back of a wooden spoon to crumble the beef . Season with oregano, garlic powder, salt and pepper
Add tomatoes and basil; bring to a simmer. Fold in half the mozzarella, then the pasta..
Scatter the remaining mozzerella over the top of the pasta. Carefully transfer the pan to the oven. Broil until the cheese is melted.
It’s much colder here today and we’re to have rain changing over to snow tonight. Keep warm everyone and be safe.

Remembering President Abraham Lincoln on his birthday.
Another great recipe. I remember making this way back when I had the recipe blog and calling in Fake it don't Make it Lasagna or something like that. Definitely a bit easier than putting together a pan of lasagna and I like that it can be made in smaller portions too. Enjoy!
