Today is World Thinking Day which has been celebrated every year since 1926, and has been an important fundraising day since 1932. It is a day about freindship, advocacy and fundraising, all to support over 10 million Girl Guides and Girl Scouts around the world.
This special day is celebrated in several ways. Girl Scouts and Girl Guides spend today learning about their international sisters around the world. They participate in entertaining activities advocacy theme. Past themes have included education, hunger and poverty , gender equality and environmental sustainability.
Use today to help them develop as global citizens and support your local Girl Guides or Girl Scouts.

I’m very supportive of any Scouting organizations. Right now I’m doing my part by buying Girls Scout Cookies. They are delicious and help aid the Scouts in their money making activity.
So I’m definitely celebrating this holiday. Helping the girls to think is not a bad thing at all. If none of had any thoughts what a sad world it would be. We need to use our minds to the best of our ability.
It’s my day to cook something new here and on the menu is:
Vegetabe and Beef Stuffed Red Peppers
Makes 6 servings
6 medium sweet red peppers
1 lb lean ground beef
1 Tbsp. olive oil
1 zucchini, chopped
1 yellow summer squash, chopped
1 onion, finely chopped
1/3 cup chopped green pepper
2 cups chopped fresh spinach
4 garlic cloves, minced
1 cup long grain wild rice
1 can, 8oz., tomato sauce
1/2 cup shredded mozzarella cheese
1/4 tsp. salt
3 slices provolone cheese, halved
Preheat oven to 350 degrees. Cut and discard tops from the peppers, Remove seeds. In in a pot, cook peppers in boiling water until crisp tender, 3 to 5 minutes. Drain and rinse in cold water.
In a large skillet, cook beef over medium high heat until no longer pink, breaking into crumbles.. Remove with a slotted spoon; pour off any drippings.
In same pan heat olive oil over medium high heat and saute zucchini and squash, and onion, and green pepper until tender. Add spinach and garlic; Cook until spinach is wilted. Stir in beef, rice, tomato sauce mozzarella cheese and salt.
Place red peppers in a greased 8 inch square baking dish. Fill with meat mixture. Bake covered until peppers are tender and rice is done. About 40 minutes.Top with provolone cheese; bake uncovered until cheese is melted , about 5 minutes more.
I’ll probably only use 3 peppers as 1/2 a stuffed pepper is plenty for me. No sense fixing more than I’ll eat.
It is also the day I make up a menu for next week so that I can do my grocery shopping. On the menu for next week is:
Monday- One Pot Chicken and Broccoli Pasta
Wednesday-Creamy Fettuccine with Brussels Sprouts and Mushrooms
Friday - Avocado Egg Salad Sandwiches
Weekend- Pork Chops with Creamy Mushroom Sauce
I’m off to have my lab work done today and that means I’ll be getting a lot of steps in and part of those will be outside from the parking garage to the hospital. Its a rainy day here but I’ll have my umbrella handy. Hopefully all will go well. I’ll be picking up the groceries on the way home.

Having been a Brownie then a Girl Scout, I've a soft spot for the Scouting program -- but never heard of that initiative. Closest was my father's daily advice: "Keep your wits about you."
