ON THE BRIGHT SIDE
MONDAY,FEBRUARY 14TH, 2022
The moments our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Life is a special occasion!

Today is Valentines Day which is a day to surprise your loved ones with a thoughtful Valentine gift of cards, hearts and flowers.
For centuries , people have celebrated February as the month of Romance. In Ancient Rome, for example a bachelor would pick the name of a young woman out of a hat during the festival of Lupercalia. He would then be paired with his chosen woman for the year and often ended up marrying her.
The tradition of sending romantic greetings on the feast of St. Valentine emerged during the Middle Ages. St. Valentine was a Roman priest who secretly preformed marriages for young lovers forbidden to wed. February 14th was a celebration of the day the birds began to pair. Today, Valentines Day is a popular occasion for romantic dinners, gift exchanges and weekend get aways.
To celebrate send a card to your loved ones.
If you can't see the bright side, polish the dull side
THOUGHT FOR TODAY
Let us always meet each other with a smile, for the smile is the beginning of love.
Mother Teresa
I didn’t get any cards sent out for Valentines Day, so please consider this post my card to you. You are loved and very appreciated.
I’ve no special plans for this day, It’ll be a normal Monday here at my house. I’ll be cooking a dinner for me, and no company is coming over.
On the menu for today is:
Burger Sliders with Secret Sauce
Makes 12 sliders
2 lbs. lean ground beef
2 eggs, beaten
3/4 cup onion minced and divided
2 tsp garlic powder
1 tsp salt
1 tsp pepper
1 package dinner rolls
1/2 cup Thousand island salad dressing, divided
10 slices Americn Cheeses
12 sliced dill pickles
1 1/2 cup shredded iceberg lettuce
1 Tbsp. butter, melted
1 Tbsp, sesame seeds, toasted
Preheat oven to 350 degrees. In a bowl, mix beef, eggs, 1/2 cup minced onion, garlic powder, salt and pepper.lightly but thoroughly. Place meat mixture on a parchment lined baking sheet; shape in a rectangle about 1/2 inch thick. Bake until a thermometer reads 160 degrees, 15 to 20 minutes.
Meanwhile without separating rolls, cut rolls in half horizontally.Spread 1/4 cup of dressing evenly over bottom halves of rolls.
Blot the meat with paper towels to remove excess fat; top with cheese and return to the oven. Bake until cheese is melted. Place meat on bottom halves of rolls, spread with remaining 1/4 cup dressing. Layer with pickles , remaining cup of minced onion and shredded lettuce. Replace with top halves of rolls . Brush butter on top of the rolls and sprinkle with sesame seeds; Cut into sandwiches. Serve immediately.
You could also serve the toppings on the side and let everyone put what the want on their slider. I didn’t have any sesame seeds so omitted that part. I also will be cutting this recipe in half for just me. It all sounds very good to me.
I hope you all have a GREAT start to this new week. Happy Monday!

Almighty and eternal God,
Protect our military
as they discharge their duties
with the shield of your strength,
may the power of your love
enable them to return home in safety
that with all who love them
they may ever praise you for your loving care.
AND bless our Police Officers, Firefighters and EMT’s.
We ask this through Christ our Lord.
