Today is National Yorkshire Pudding Day which celebrates an iconic British pastry similar to a popover. The first recipes for the dish appeared in the 1700’s, but the exact origin is unknown.
Yorkshire Pudding is made combining flour eggs,salt, milk and pan drippings from prime rib or roast beef. The result is a light doughy roll with a small well in the center that is usually filled with gravy.
Yorkshire Pudding is still a popular dish in modern day Britain, and often makes an appearance at big Sunday dinners. In fact, culinary historians refer to it as the national dish of England.
To celebrate today, make a homemade batch to enjoy for dinner.

Cooking is all about people. Food is maybe the only universal thing that really has the power to bring everyone together. No matter what culture, everywhere around the world, people get together to eat.

I won’t be celebrating this dish today due to the fact that roast beef isn’t on my menu, but it does sound delicious so maybe I’ll have it next time a roast beef is on the menu.
On the menu for today is:
Skillet Chili Mac
Makes 6 servings
12 oz noodles, rotini or fusilli
2 tbsp. olive oil
1 onion diced
2 poblano peppers or green bell peppers
1 stalk celery, diced
3 cloves garlic, minced
1 lb. lean ground beef
3 tbsp chili powder
1/2 tsp salt
1 can, 28 oz, diced tomatoes
1 cup beef broth
1 can kidney beans or chili beans, rinsed
1/2 cup sour cream
3/4 cup shredded Cheddar cheese
Sliced scallions or pickled jalopenos for garnish
Cook pasta 2 minutes less than the package directions. Drain.
Meanwhile, heat oil in a large skillet over medium high heat. Add onion peppers and celery and cook stirring often, until softened. Add garlic and cook for 30 seconds. Add beef, chili powder and salt; cook stirring and breaking up with a spoon, until beef is no longer pink.
Add tomatoes and their juice and the broth; bring to a boil over high heating cook for 2 minutes. Add the beans and pasta, reduce heat to medium and cook stirring often, until hot. Remove from heat. Fold in sour cream. Serve topped with Cheddar and scallions or jalapeños, if desired.
I’ll be using the green peppers, not the hot ones. I like my food mild. Otherwise, I’ll follow the recipe. It’s one of my favorites.
Today is also the day I go shopping and once again I’ve made up a menu for next week to do my shopping from.

We’re having another beautiful summer like day here. I’ve so enjoyed them all. It’s wonderful to get out and enjoy the weather. Soon we’ll be cooling off and I’m not looking forward to it. I like being warm and not cold.
On the bright side I had a good doctor’s appointment. He’s happy I’m maintaining a good blood pressure and my weight is also remaining steady. My blood test that he did came up normal, so he is not concerned about my thyroid. The kidney doctor had said the test he did showed a high thyroid count, but I guess it was a one time thing, nothing for me to worry about.
On the downside, another of DS#5’s family now has covid. That makes 3 out of 5 for them. The fist two are recovering and the third now is running a temperature. I keep praying no one else will catch it and that soon they’ll all be well.
The pictures today are of a Trick or Treat Night dinner I shared with DS#5 and family a couple years ago..

I've never had Yorkshire Pudding but it sounds wonderful. Yep, I'm going to Google that recipe ... Tom loves gravy with our roasts.
