Today is Sweetest Day which was originally called, The Sweetest Day of the Year.This holiday celebrates all things sweet. Although it may sound similar to Valentines day, Sweetest Day, it does not focus exclusively on romantic love. Instead it serves as a reminder that a thoughtful deed makes life a whole lot sweeter. Now there’s a sweet thought indeed.
Sweetest Day originated in Cleveland, Ohio in 1921. A committee of twelve candy confectioners decided to spread joy and cheer to those that were often forgotten during the holidays. They distributed over 20,000 boxes of candy to newsboys, orphans, hospital patients, the elderly and the poor across the city. Although Sweetest Day is most popular in the Great Lakes region, the holiday is gaining recognition nationwide. It is celebrated the third Saturday of October each year.
To celebrate today share a meal with love ones or send a thoughtful greeting and remember to do a good deed for someone in need.

Sweets to the sweet!

I don’t expect to be able to share a meal with anyone today but it is my day to cook for the weekend and on the menu is:
Slab Chicken Potpie
Makes 8 servings
5 cups chicken broth
1 tsp pepper, plus more for sprinkling
1/2 tsp. kosher salt
4 large springs thyme
2 bay leaves
1 cup milk
3/4 cups flour, plus more for dusting
1 1/4 lbs. boneless skinless chicken thighs, trimmed and cut into bit size pieces
1 24 oz package frozen mixed vegetables
1 cup chopped flat leaf parsley
1 14 ox package frozen pie crusts, thawed
1 egg, lightly beaten
Combine broth, pepper, salt, thyme and bay leaves in a large sauce pan. Bring to boil over high heat. Cook, undisturbed until reduced to about 4 cups. Discard thyme and bay leaves
Whisk milk and flour in a small bowl, then whisk into broth in the pan. Bring to a boil over high heat, cook stirring constantly, for 1 minute. Stir in chicken. Remove from heat and let stand 5 minutes. Stir in mixed vegetables and parsley. Pour the mixture onto a large rimmed baking sheet.
Preheat oven to 425 degrees. Unroll pie crusts on a lightly floured work surface . placing one on top of the other Roll out into a rectangle. Cut into strips using a decorative wheel or pizza cutter. Place half the strips diagonally across the chicken mixture, Weave in the remaining strips to form a lattice pattern.Trim excess dough from edges and discard. Brush top of the top with egg. Sprinkle with pepper to taste.
Bake until top is browned and the chicken cooked through, 30 to 35 minutes.Let cool for 5 minutes. Cut into 8 pieces to serve.
You could also make a whole layer of crust over the top instead of the lattice if you’d like more crust.
As it has really cooled off here it’s a good day to turn on the oven. It’s also a good day to stay in and get things done at home. Raining and cloudy.
