Today is National Nut Day which celebrates one of the healthiest, most nutritious and delicious snacks.
Medical studies have shown that eating nuts reduces hypertension and the risks associated with heart disease. Nuts are also full of protein, fiber and unsaturated fat.
Peanuts, however, are not nuts. They are legumes and belong to the bean family. Some popular types of nuts include pecans, walnuts, pistachios, almonds and macadamia nuts.
To celebrate today, eat lots of nuts as a snack or on top of your favorite dessert.
If you can't see the bright side, polish the dull side

My favorite nut would be pecans and I have a couple pieces of pecan pie on hand so I will be celebrating this day. I got the pie at the grocery store and didn’t make my own.
It often seems like I’m under attack from nuts here, as the oak tree is dropping acorns on my house whenever the breeze blows. There are a lot of them coming down. The squirels and the birds will be enjoying them all winter long.
It’s Friday and my day to cook and on the menu is:
Pumpkin Lasagna
Makes 6 servings
1/2 lb. sliced mushrooms
1 onion chopped
1/2 tsp.salt, divided
2 tsp olive oil
1 can, 15 oz. solid pack pumpkin
1/2 cup half and half cream
1 tsp. dried sage
dash pepper
9 no cook lasagna noodles
1 cup ricotta cheese
1 cup shredded mozzarella cheese
3/4 cup shredded Parmesan cheese
In a small skillet sauté mushrooms, onion and 1/4 tsp. salt in oil until tender. Set aside. In a small bowl combine the pumpkin, cream, sage, pepper and remaining salf.
Spread 1/2 cup pumpkin sauce in baking dish coated with cooking spray. Top with 3 noodles. Spread 1/2 cup pumpkin sauce two the dude of noodles. Top with mushroom mixture, 1/2 cup ricotta, 1/2 cup mozzarella and 1/4 cup parmesan cheese. Repeat layers. Top with remaining noodles and sauce.
Cover and bake at 375 degrees for 45 minutes. Uncover and sprinkle with remaining Parmesan cheese. Bake 10 to 15 minutes longer or until cheese is melted. Let stand for 10 minutes before cutting and serving.
I don’t have no cook noodles so will have to cook mine first. This is a new recipe to me, so it’ll be interesting to see how it turns out.
We’re supposed to be cool for the weekend with a high temp in the 50’s. So it will be good to turn the oven on

I love nuts. My favorites are pistachios and macadamia, but oh my word, they're pricey. Not sure, but I think it was you who mentioned adding walnuts to her salad? -- I do that every time now and don't miss croutons one bit!
