Today is Christopher Columbus Day which commemorates his voyage in 1492 to find a shorter trade route to Asia. He sailed west and accidentally landed in the Americas, spawning the era of European exploration in the New World.
The first celebration of his discovery did not take place until October 12, 1792, exactly 300 years after his landing. In 1937, President Franklin Roosevelt proclaimed Columbus Day a national holiday, observed each year on thee 2nd Monday of October.
Today is also indigenous Peoples day which serves as a counter holiday to Columbus Day and observed in at least 10 states and is meant to celebrate and acknowledge the contributions and achievements of the Native Population.

Following the light of the sun we left the Old World.

This used to be a day off school for years, but isn’t anymore. Now it’s pretty much like any other day, but I did see on the news that some have the day off work due to the holiday.
There isn’t any new land to explore now on earth, but I think the idea of being an explorer is a good idea. We should always be on the look out for new things and discover new things to do.
It’s Monday and my day to cook up something new to eat and on the menu is:
Beef and Bean Sloppy Joes
Serves 4
1 tbsp. olive oil
12 oz. lean ground beef
1 cup black beans, rinsed
1 cup chopped onion
2 tsp chili powder
1/2 tsp. garlic powder
1/2 tsp onion powder
Pinch of cayenne pepper
1 cup tomato sauce
1 tbsp. ketchup
1 tbsp. Worcestershire sauce
2 tsp. spicy brown mustard
1 tsp light brown sugar
4 hamburger buns, split and toasted
Heat oil in a nonstick skillet over medium high heat. Add beef and cook breaking up with a wooden spoon, until lightly browned but not completely cooked through. Using a slotted spoon, transfer beef to a bowl, reserving drippings in pan.
Add beans and onion to the pan, cook stirring often, un the onion is softened. Add chili powder, garlic powder and cayenne . Cook stirring constantly until fragrant. Stir in the tomato sauce, ketchup, Worcester sauces, mustard and brown sugar. Return beef to pan. Bring to a simmer and cook, stirring often until beef is just cooked through and the sauce is thickened slightly. Serve on buns.
I won’t be adding the brown sugar to mine, I don’t like to have any more sugar that necessary. I have some leftover potato salad in the fridge to have along with my sandwich for dinner.
Today I have my rescheduled doctor appointment for my checkup. I’m not going to miss this one and have set several reminders to make sure I get there on time.I feel sure I’ve gained more weight and I know it’s something I have to work on.

What’s New at My House

It's a great day here, Summer like and above normal temps for us. But more normal temps are to come our way by the weekend.
OK, then! Instead of dreading our trip to Birmingham (eye doc) this afternoon, I'm gonna put on my virtual Christopher Columbus hat and pretend we're on an adventure.
Hard to believe I used to feel fearless navigating big city downtowns, but that city's got my number. Fingers crossed for a good doctor's visit this afternoon!
