Today is Make a Difference Day which is celebrated each year on the 4th Saturday of October.
Make a Difference Day is the largest national day of community service and is a celebration of neighbors helping neighbors. The event was created by USA WEEKEND magazine in 1992.
Community service is a donated service or activity that is performed by someone or a group of people for the benefit of the public or its institutions. Performing community service is not the same as volunteering, since it is not always done voluntarily.

There is no doubt in my mind that we can all make a difference everyday by simply helping someone. It may be as simple as cheering them up with a smile or a compliment or as hard as helping them get a job done. We can help mow lawns or rake leaves. Maybe even pull some weeds.
There is no lack of ways to be kind to another person. Kindness is a gift that cost nothing and is easy to give. We can all afford a little kindness to others.
It’s Saturday and my day to cook for the weekend. I’m going to do a kindness for me so I don’t have to cook at all on Sunday.
On the menu is:
Beef Burgunday Over Noodles
Makes 2 servings
2 tsp. butter
1/2 lb. beef top sirloin cut into 1/4 inch thick strips
2 tbsp.diced onion
1 1/2 cups quartered fresh mushrooms
3/4 cup burgundy wine or beef broth
1/4 cups plus 2 tbsp. water, divided
3 tbsp. parsley, divided
1 bay leaf
1 whole clove
1/4 tsp salt
1/8 tsp. pepper
2 cups uncooked medium egg noodles
1 tbsp. all purpose flour
1/2 tsp browning sauce, optional
In a Dutch oven or large nonstick skillet, heat butter over medium high heat: Saute beef and onion until beef is lightly browned. Stir in mushrooms, broth , 1/4 cup water, 2 tbsp. parsley, and seasonings. Bring to a boil reduce heat and simmer covered until beef is tender, about 1 hour.
Meanwhile, cook egg noodles according to package directions. Drain.
In a small bowl, mix flour and remaining water until smooth; stir into beef mixture . Bring to a boil, cook and stir until thickened . Discard bay leaf and clove. If desired stir in browning sauce. Serve over noodles . Sprinkle with remaining parsley
I don’t have any wine on hand so I’ll be using the beef broth. But they say wine will be bring out the flavor of the beef. I’m going to have this with a side of roasted carrots and asparagus.
It’s to be another cloudy day here with temps in the upper 50’s, with only a slight chance of rain. That’s good news, we’ve had enough for now.

Kindness is a gift we can give no matter where we are or whaat resources we have. Anyone can be kind.....and I do not understand why more people aren't.
I love that you cook such delicious meals.....I am trying to cook good meals for me and Louis Dean. And I don't really like to cook - but I do it anyway!

Years ago we kept a jug of Burgundy wine -- both to sip and saute. Mushrooms, usually, served atop steak. I may have to revisit that one of these days.
