Today is National Pumpkin Day which celebrates the harbinger of the harvest
season, appearing every year as the first sign of autumn. There are over 45 different varieties of pumpkins. They range in color from white to red and even blue.
Pumpkins can be grown on every continent except Antartica and the United States produces about 1.5 billion pounds of them each yar. A Wisconcin farmer grew the largest pumpkin ever recorded. He used seaweed, cow manure and fish emulsion to grow his pumpkin, which weighed in at a total of 1,810 pounds and was the size of a dumpster.
Celebrate today by carving a pumpkin in time for Halloween. Don’t forget to bake the pumpkin seeds for a healthy autumn snack too.

I’ve already shown a lot of pumpkin pictures and today’s are more of those that the grands have been carving. They are a lot of fun and brighten up the dark nights we’re having. DD said when they carved their pumpkins this year they did roast the pumpkin seeds and that’s what my recipe is for today. It is a delicious and healthy snack.
Roasted Pumpkin Seeds
1 1/2 cups raw whole pumpkin seeds
2 tso, butter, melted
1 pinch salt
Preheat oven to 300 degrees.Toss seeds in a bowl with the melted butter and salt. Spread the seeds in a single layer on a baking sheet and bake for about 45 minutes until golden brown; Stir occassionally.
This week is another cloudy and most rainey one here for us. It’s chilly with temps in the 50’s. So it’s time for making our own sunshine and what better way to do it but to carve a pumpkin, especially one with a happy face.
