Today is National Chocolate Cupcake Day which celebrates a delightful treat served at gourmet bakeries and kitchen tables across the country.
Cupcakes first emerged during the 19th century in the United States. There are two theories about how they got their name. One claims that the miniature cakes were originally baked in cups. The other suggests that the name comes from the recipe measured out by the cup — one cup butter, two cups sugar, three cups flour, 4 eggs, one cup milk, one teaspoonful baking soda.
Cupcakes are now made with a variety of flavors, ingredients and decorations., but simple chocolate cupcakes remain a perennial favorite.
To celebrate today, bake frost and decorate a batch today.

I usually make cupcakes for a special occasions when I have someone to help me eat them. I’m only one person and can’t eat all of them by myself. So for today, I’ll forgo the cupcakes and stick to my regular menu:
Taco Corn Bread Casserole
Makes 8 servings
2 lbs lean ground beef
2 envelopes taco seasoning
2 cans diced tomatoes, drained
1 cup water
2 cup cooked rice
1 can chopped green chilies
2 packages, 8.5 oz. cornbread muffin mix
1 can whole kernel corn, drained
1 cup sour cream
2 cups corn chips
2 cups shredded Mexican cheese blend or cheddar cheese, divided
1 can, 2 1/4 oz. sliced ripe olives, drained
Optional : shredded lettuce chopped, chopped tomatoes and chopped red onion
Preheat oven to 400 degrees. In a dutch oven cook beef over medium heat until no longer pink, breaking into crumbles. Drain. Stir in taco seasoning. Add tomatoes, water, rice and green chilies . Heat through, stirring occasionally.
Meanwhile prepare cornbread according to package directions. Stir in corn. Pour half of the batter into greased baking dish. Layer with half the meat mixture, all the sour cream, half the half the corn chips and 1 cup cheese. Top with remaining batter, meat mixture, olives and remaining corn chips.
Bake uncovered until cornbread is cooked through. 55 to 60 minutes. Sprinkle with remaining cheese and bake until melted. About 3 to 5 minutes.
If desired, serve with lettuce tomatoes and red onion.
As usual for me, I’ll be omitting the chilies in this recipe. I like my food mild. I’ll also omit the ripe olives because I don’t have any on hand and will probably halve this recipe, using only 1 pound ground beef and one box of corn muffin mix. It’ll still make plenty for me to have some leftover for tomorrow.
Sadly I’ll be starting the day with a maintenance call. My furnace isn’t heating, it’s blowing cold air, so something is wrong. It’s a chilly morning here, so I’ll be calling first thing and tonight is supposed to be close to 40 degrees. BrrrChill!
The pictures today I’ve shown before. They are from a visit with DS#2 several years ago now. The cupcakes were the only and best gourmet cupcakes I ever bought.

Those cupcakes sure look unforgettable! Love that saying about muffins that believed in miracles. LOL!
There's nothing that I DON'T like about this recipe! I've had pretty good luck (knock wood) using a bundt pan in my Instant Pot for my Jiffy corn casserole, I'm going to try this next week with the ground beef.
The recipe sounds delicious and doable!
