Today is National Fried Scallops Day which celebrates a type of marine mollusk in the Pectindae family. Scallops are typically two to five inches in size and can swim by rapid closing of their shells. The muscle used for this activity is the only part of the animal we eat.
Scallops are a highly prized seafood delicacy, known for their delectable taste and the many ways they can be prepared. In Japan, for example, scallops are served in soups or prepared as sushi. In Western cultures scallops are usually breaded, deep fried or sautéed in butter.
To celebrate today support your local seafood resturant and order some delicious fried scallops. Bon appetit!

I’m on a seafood diet - I see food , I eat it.

I love all kinds of seafood, including scallops, but my favorite seafood to eat is coconut shrimp that I get at Red Lobster! Seafood is very good and good for us too.
But for today I’m cooking for the weekend and on the menu is:
Makeover Beef Stroganoff
makes 6 servings
1/2 cup plus 1 tbsp. flour, divided
1/2 tsp pepper, divided
1 beef top round steak, cut into thin strips
2 tbsp vegetable oil
1 cup sliced mushrooms
1 onion, chopped
1 garlic clove, minced
1 can, 14.5 oz,,. beef broth
1 tsp salt
1 cup sour cream
chopped fresh parsley, optional
3 cups cooked yolk free noodles
Combine 1/2 cup flour and 1/4 tsp pepper in a large bowl. Add beef strips, a few at a time, and turn to coat.
In a large nonstick skillet, heat oil over medium high heat. Cook beef in batches until no longer pink. Remove and keep warm. In same skillet, saute mushrooms and onion in the drippings until tender. Add garlic and cook 1 minute longer.
Whisk remaining flour with broth until smooth. Stir into skillet. Bring to a boil, cook and stir until thickened, about 2 minutes. Add beef and remaining pepper. Stir in sour cream, heat through, do not boil. If desired sprinkle with parsley and coarsely ground pepper. Serve with noodles.
I like to add my cooked noodles in the beef mixture and let simmer for about 20 minutes until the flavors are absorbed. For this reason I think of it as a casserole.
It’s supposed to be a pretty nice day but rain will be moving our way tonight. So I should try and get out and about while it’s dry out. But I’ll probably just stay in and do a few things around the house and maybe spend some time out on the porch.
