Today is World Habitat Day which celebrates the holiday that was created by the United Nations in order to promote sustainable urban development and adequate shelter for all. It is also intended to remind the world of al it’s shared responsibility for the future of the human habitat.
The large river valleys of Africa served as the original natural habitat of the human species. Today half of the population lives in poorly managed towns and cities where adequate shelter and basic services like water, sanitation and electricity are threatened.
To celebrate this holiday, take a stand and get involved in events of your local community today.

Thankfully, I have a wonderful home, which is shown in today’s pictures. It is cozy and safe and full of my stuff. I’ve never not had a home and pray for all those that face homelessness and poverty. Not everyone has the services I do, plenty of fresh water, electricity and natural gas. I really have every thing I need to live a comfortable life. There is truly no place better than home.
It’s Monday and I have a new recipe to share for dinner tonight:
Slow cooker Spaghetti and Meatballs
Makes 12 servings
Meatballs:
1 cup seasoned bread crumbs
2 tbsp. Grated Parmesan cheese
1 tsp pepper
1/2 tsp salt
2 eggs, beaten
2 lbs. lean ground beef
Sauce:
1 onion, finely chopped
1 green pepper, finely chopped
3 cans , 15 oz each, tomato sauce
2 cans, 14.5 oz. each, diced tomatoes, undrained
1 can, 6 oz., tomato paste
6 garlic cloves minced
2 bay leaves
1 tsp. each, basil, oregano and parsley flakes
1 tsp salt.
1/2 tsp pepper
1/4 tsp crushed red pepper flakes
Hot cooked spaghetti
In a large bowl, mix bread crumbs, cheese,, pepper and salt. Stir in eggs. Add beff; mix lightly but thoroughly. Shape into 1 1/2 inch meat balls. In a large skill, brown the meatballs in batches over medium heat. Drain.
Place the first 5 sauce ingredients in a slow cooker, stir in garlic and seasonings. Add meatballs, stirring gently to coat. Cook covered on low 5 to 6 hours until meatballs are fully cooked.
Remove the bay leaves . Serve with spaghetti.
I always keep frozen meatballs on hand so I didn’t make my own today, but put the frozen ones in the sauce. This makes it a very easy dinner to cook. I also like add ny spegetti to the sauce and let it simmer about 20 minutes to absorb the flavor.
This is a large recipe so I’ll be cutting it in half, but it would be good for when I have company.
It’s looking like a rainy week here but we should be in the mid 70’s most every day too. Time to make our own sunshine for sure.
