Today is National Fluffernutter Day which celebrates a yummy sandwich made with bread, peanut butter and marshmallow fluff which is now a classic American treat that is typically enjoyed in school cafeterias, college dorms, and local diners nationwide
Marshmallow candy can be traced beck to ancient Egypt when people first began to harvest the marshmallow plant. During the 19th century, French pharmacists extracted the juice from marshmallow plants and heated it with egg whites and sugar creating a marshmallow cream.
Then in 1917 Archibald Query of Somersville, Massachucetts created the special formula for marshmallow fluff that we know and love today.The city of Somerville celebrates with the famous, What the Fluff, festival every year.
Today you can celebrate by making a delicious Fluffernutter sandwich to enjoy for lunch today.

Love and happiness remind me of sticky peanut butter. When you spsrsead them around, you cant help but end up getting some on yourself.

I have the ingredients for this sandwich today so I can celebrate and have one for lunch, but on my dinner menu is:
Four Cheese Sausage Rigatoni
Makes 12 servings
1 pkg, 16 oz, rigatoni pasta
1 lb bulk italian sausage
1 medium sweete pepper chopped
1 onion, chopped
2 garlic cloves, minced
3/4 cup heavy whipping cream
1 can, 28 oz. crushed tomatoes in puree
1 can 5 oz. tomato paste
2 tsp Italian seasoning
1/2 tsp. crushed red pepper fkakes
1 carton, 15 oz. ricotta cheese
1 cup shredded Parmesan cheese, divided
4 oz. goat cheese, softened
1 egg, beaten
1 tsp salt
1/2 tsp pepper
8 oz. mozzarella cheese, cubed
Torn fresh basil, optional
Preheat oven to 350 degrees. In a stock pot, cook rigatoni according to package instructions.Drain and transfer to a bowl.
In the same stockpot , cook and crumble sausage with red pepper and onion over medium heat until no longer pink. Add garlic and cook 1 minute longer.Drain. Add cream, cook 5 minutes, stirring occassionally. Stir in tomatoes, tomato paste, and Italian seasoning and pepper flakes . Cook uncovered over medium low heat until sauce is thickened. Meanwhile combine ricotta, Paremesan, goat cheese, egg and seasonings.
Stir rigatoni into meat sauce . Spread 3 cups into each of 2 greased baking pans.Top each with half of cheese mixture, then half the remaining pasta mixture. Bake covered 25 minutes. Sprinkle with mozzerella and remaining Parmesan cheese . Bake uncovered until cheeses ae melted. If desired, sprinkle with basil.
As I try to keep Friday’s meatless, I won’t be adding the sausage to my pasta. This recipe makes 2 casseroles at one time. Serve one and freeze the other.Or you could use one pan if you have one large enough. I’ll be making only 1/2 this recipe.
This afternoon, I’ll be going to my doctor for my regular check up. He keeps a good watch on me to monitor my blood pressure. So it should be a short visit with no concerns at all.
