Today is Pumpkin Cheesecake Day which celebrates the pumpkin flavored treats that are every where. You can find all sorts of goodies like pumpkin ice cream, pumpkin pancakes, pumpkin soup, pumpkin beer, pumpkin coffee, pumpkin bread, pumpkin muffins, pumpkin cookies and pumpkin cheesecake.
Pumpkin cheesecake is traditionally made with a graham cracker crust and a pumpkin puree cheesecake filling. It is said that cheesecakes were popular in Greece as early as 2000 BC. Today there are hundreds of variations all over the world.
Support your local bakery and order a pumpkin cheese cake and enjoy a delicious slice in honor of the holiday.

I do love everything pumpkin and happen to have all the ingredients needed to make this dessert today, so I will definitely be celebrating.
I happend to see a great recipe on FB this morning so I thought I’d share it with you all.
No Bake Pumpkin Cheesecake
`1 prepared graham cracker pie crust
12 oz cream cheese
1 1/2 cups canned pumpkin
1 3/4 cups powdered sugar
1/2 tsp. pumpkin pie spice
3/4 cup heavy cream or 8 oz. Cool Whip
Optional Topping, Whipped cream or Cool Whip
In a large bowl, beat together the cream cheese, powdered sugar , pumpkin and pumpkin pie spice until smooth. Gently fold in Cool Whip or whipped cream.
Carefully spread mixtures on the top of crust being careful not to break it.
Refrigerate 6 hours or overnight. Serve topped with additional whipped cream or Cool Whip. Store in refrigerator.
I’ll be using Cool Whip in mine.
