Because I have quite a few teachers in my family, I know how much they do and how dedicated they are. So I will celebrate today and thank them all for all that they do. DS#5 and DDIL #6 are teachers, DD is a teacher’s aide as is DDIL#1. DDIL#4 used to teach preschool, DDIL#5 used to teach special needs children and DS#3 teaches religion classes at his church. Of course all parents are the first and most important teacher our children have so I can say thank you to all of my children.
Children start learning from the minute they are born and I think we never out grow learning. The older I get I find how much I don’t know. I’ll never get too old to learn something new.
As a friend used to say, every day of life is a school day!
It’s my day to go grocery shopping and I make up my list from next week’s menu. On the menu for next week is:
Monday - Taco Corn Bread Casserole
Wednesday - Chicken and Wild Rice Bake
Friday - Curried Egg Salad
Weekend - Slow Cooker Beef Stew
On today’s menu is:
Penne Pasta with Sausage, Butternut Squash and Chard
Makes 6 servings
8 oz. prenne pasta
2 cups diced butternut squash
4 cups lightly packed chopped chard
1 cup diced smoked sausage
1/2 cup finely chopped shallot
2 Tbsp. butter
2 Tbsp. chopped fresh sage
2 Tbsp flour
2 cups milk
1 cup grated parmesan cheese, plus more for serving
1/2 tsp salt
pinch of grated nutmeg
Crushed red pepper flakes for garnish
Bring large pot of water to boil. Add pasta and cook for 2 minutes. Add squash and cook 6 minutes. Add chard and cook until pasta is tender. Drain and return to pot.
Meanwhile combine sausage, shallot and butter in a large pan over medium heat. Cook, stirring occasionally, until shallot is soft, about 5 minutes. Add sage and sprinkle with flour; cook stirring for 1 minutes. Whisk in milk and cook, whisking occasionally until sauce starts to thicken, about 5 minutes. Stir in cheese, salt and nutmeg; cook until cheese melts and sauce is thick.
Pour sauce over pasta mixture and stir to coat. Serve topped with more cheese and pepper flakes, if desired.
It’s to be another sunny day here and we will warm up to almost 70 degrees ! So it will be a great day to get out and go shopping!

I'm thankful for all the wonderful teachers in my life. We never get too old to learn something new.
Oh YES, our teachers do deserve so much credit. Today's world is actually tough on teachers methinks. Many of today's responsibilities are 'directed' for them when it was once voluntary on their parts. Under 'orders' for things at times make them drudgery. Anyway enjoyed the visit and reminders you always give. Be safe. Love from Florida, Sherry & jack smiling in the sun.
Such a worthy day! Tho' I could never be a good teacher, I sure value those who are. In my opinion they all deserve more appreciation (and pay!).
I love egg salad, but never thought about including curry -- which is another favorite. Looking forward to reading all about it!
My daughter is a teacher and she works really hard for her kids!
