I have shown this picture of my little grandson dressed in his Frankenstein costume, every year for a long time on this day. He still remains the cutest little Frankenstein monster I’ve ever seen. His great grandma made the costume for him and she did a great job! As she also made some of the others he has worn.
We’re gearing up here now for trick or treat night which is tomorrow. I’ve no costume to wear my self, but I will be wearing black so I’ll blend into the night quite well. I used to dress up as a ghost years ago and once scared a little girl so much that she cried so after that I stopped putting a costume on. It’s supposed to be a fun night to my way of thinking.
DS#5 always invites us to his house for Trick or Treat night and this year he is making Ham bone and bean soup for our treat. Some of us will stay at the house and hand out treats and some will be going Trick or Treating with the kids, who are very excited.
It’s my day to cook here and on the menu is:
Loaded Sweet Potato Nacho Fries
makes 10 servings
2 Tbsp. olive oil
2 sweet potatoes, cut into stick about 1/4 inch thick
1/4 tsp salt plus a pinch divided
2 Tbsp. sour cream
1 Tbsp. lime juice
1 cup corn kernels, fresh or frozen
1/2 cup shredded Cheddar Cheese
1/3 cup black beans, rinsed
1/3 cup cherry tomatoes, halved or quartered if large
2 scallions, sliced
1 avocado, chopped
2 Tbsp chopped cilantro, optional
Preheat oven to 425 degrees. Heat oil in cast iron skillet over medium high heat. Add sweet potatoes and 1/4 tsp salt. Cook stirring occasionally, until beginning to brown. Transfer the pan to the oven and bake until sweet potatoes are soft.
Meanwhile, combine sour cream, lime juice and remaining pinch of salt in a small bowl.
Top the sweet potatoes with corn, cheese and beans. Continue baking until the cheese is melted . Top with tomatoes scallions and avocado. Drizzle with the sour cream mixture and top with cilantro if using.
I don’t have an avocado today so won’t be using that in mine but they still will be very tasty. I also have frozen sweet potato fries on hand so I will not have to cut up my own. And I will only make 1/2 this recipe for just me. This dish could be used as an appetizer or you could even add meat to it to make it more filling.
Today we’re beginning to warm up a bit and should be in the 60’s and tomorrow will be a great Trick of Treat with temps in the mid 60’s and sunny. Truly it looks like the best day of the week.

Your family's tradition sounds like great fun. I've not had a good ham/bean soup in ages, but it's definitely delicious ... especially enjoyed the next day!
