THOUGHT FOR TODAY
Gumbo of all other products of the New Orleans cuisine, represents a most distinctive type of the evolution of good cookery under the hands of famous Creole Cuisnieries of old New Orleans.

Although there is something else on my menu today, I’m still going to celebrate this famous dish. I got to to New Orleans once and was able to have some some authentic gumbo when I visited one of my sons. It was a trip I’ll never forget. First we went to Mississippi to celebrate DS#2’s retirement from the military. Then they to took us to New Orleans. The food of all kinds was wonderful!
It’s my day to make up a new menu for next week and make my grocery list. It’s also the day I go shopping. We have a chance of rain showers today, so hopefully I get out and stay dry.
My menu for next week is:
Monday - Cheese Burger Soup
Wednesday - Meatloaf from the Slow Cooker
Friday - Best Ever Mac and Cheese
Weekend - Hungarian Short Ribs
and on the menu for today is:
Chicken and Wild Rice Bake
makes 10 servings
3 cups water
1 cup uncooked wild rice
2 1/2 tsp salt, divided
1/4 cup butter, cubed
1 lb fresh sliced mushrooms
1 onion, chopped
3 cups diced cooked chicken
1 jar chopped pimento, drained
1/4 cup minced fresh parsley
1/4 tsp pepper
1 cup chicken broth
1 cup heavy whipping cream
1/4 cup grated Parmesan cheese
3/4 cup sliced almonds
In a large sauce pan bring water to boil, stir in rice and salt. Reduce heat, simmer covered, until kernels have puffed open. about 50 minutes. Drain any excess water.
Preheat oven to 350 degrees. In a stock pot, heat butter over medium heat, saute mushrooms and onion 5 minutes. Stir in chicken, pimento , parsley, pepper, broth, cream and remaining salt.
Transfer to a baking dish. Sprinkle with cheese and almonds. Bake uncovered until heated through, about 60 minutes.
I’m missing serveral items in this recipe. I don’t have pimento, or almonds. And I have only dried parsley. My fresh herbs are no longer living outside. But I think this recipe will be just fine without them and won’t be missed.
It’s to be a chilly day here so turning on the oven is a good idea. I’m supposed to be going out to lunch with some of my high school class reunion friends, but there will be no Cajun cuisine there, It’s an Italian restaurant.

I have some wonderful memories of New Orleans. It was a trip to remember.
Aren't travel memories wonderful? There's a seafood restaurant in downtown Montgomery that serves gumbo, but I've never tried it! (Something else for my never-ending 'to do' list.)
Today's recipe is another delish-sounding one. Oh, I can't wait to turn our oven again. Autumn still can't make up its mind; our air conditioner was coming on again yesterday.

I'm smiling here. We guess you were at Biloxi for your visit to Nawlins. Our favorite in Nawlins is Be-neighs. ;-) WE cannot remember eating Gumbo and now we wonder why? Love the pictures. We lived in Biloxi for about 2 years and we are scratching our heads, why not Gumbo?
