THOUGHT FOR TODAY

I do love all things pumpkin, but I have no cheesecake here today, yet I’ll celebrate the day as I do have a pumpkin pie.
Cheesecake is delicious and if I had one, I’d be eating that, but I have to make do with what I have. I looked for one when I went to the grocery store but couldn’t find one to buy.
It’s my day to cook something new here and on the menu for today is :
Best Ever Mac and Cheese
Makes 12 servings
1 16 oz. package uncooked elbow macaroni
4 slices hearty white bread torn into large pieces
6 Tbsp. butter, cubed and divided
1/2 cup grated Parmesan cheese
1 tsp salt, divided
1 tsp. pepper divided
1/4 cup finely chopped onion
1 tsp. ground mustard
1/4 tsp cayenne pepper
1/4 cup flour
3 cups milk
2 cups half and half cream
1 cup cubed Velveta
8 oz. Cheddar cheese, shredded
8 oz. Montery Jack cheese, shredded
Preheat oven to 400 degrees, cook pasta according to package directions for al dente, drain and return to pan. Pulse bread,2 Tbsp. butter, parmesan, 1/2 tsp salt, 1/2 tsp pepper in food processor until coarsely ground.
Meanwhile in a large skillet over medium heat, melt butter. Add onions and cook until tender. Add mustard, cayenne and stir until blended. Stir in flour until smooth, Slowly whisk in milk and cream, bring to a boil. Reduce heat to medium low; simmer stirring constantly, until thickened. Remove from heat, stir in Velvet. Slowly add remaining cheeses ,stirring until cheese is melted. Add Worcestershire one remaining salt and pepper. Pour over pasta and toss to coat.
Transfer to a greased baking dish. Sprinkle with bread crumbs over top of casserole. Bake until topping is golden brown and sauce is bubbly.
I will be cutting this recipe in half for just me. I only have Parmesan, velveeta and cheddar cheese so that is what I’m using in mine. It sounds delicious.
As promised we are warmer again today, in the mid 60’s but it won’t be too hot to turn the oven on.

I love all things pumpkin, especially cheesecake .
We are having a tough connection this morning, BUT that opening pumpkin is a beauty. Never had pumpkin cheese cake but cheese cake 2000 BC is an amazing fact I will store. Enjoyed the read and I am like a little kid with mac and cheese, I love it. Yours sounded good.

Oh, I could go for a good pumpkin cheesecake right about now.
Cheesecake Factory is selling theirs online (Harry & David), but it's frightfully expensive.
Tom's daughter makes cheesecake in her InstantPot. I may have to look up that recipe and try it myself before the holidays.
I don't care too much for cheesecake, but Pumpkin Pie is my favorite.
I have never seen bread in mac and cheese - interesting.
