THOUGHT FOR TODAY
Have a ghost of a time.
Have a Happy Halloween
Anthony T. Hincks
I’m definitely celebrating this holiday as it is Trick or Treat night here in our town. As I stated yesterday, I’m going over to my son’s house and join them as they do Trick or Treat. Here in my own community, they do a Trunk or Treat in the parking lot but do not go house to house. At his house the kids go out and up and down each street in the neighborhood. Most houses are decorated for Halloween and my son goes all out on his. The picture above shows his house and front yard. The other pictures are of the kids, coming and going.
He is cooking our dinner and I volunteered to take some biscuits to go along with the soup he is fixing. It’s usually my day to cook for the weekend, but since I’ll be out for dinnertime, I will make it to have on hand for tomorrow.
On the menu is:
Beef Burgundy Over Noodles
Makes 2 servings
2 tsp. butter
1/2 lb beef tip sirloin steak, cut into 1/4 inch thick strips
2 Tbsp diced onion
1 1/2 cups quartered fresh muchrooms
3/4 cup Burgundy wine or beef broth
1/4 cup plus 2 Tbsp. water, divided
3 Tbsp. minced fresh parsley, divided
1 bay leaf
1 whole clove
1/4 tsp salt
1/8 tsp. pepper
2 cups uncooked medium egg noodles
1 Tbsp. flour
1/2 tsp. browning sauce, optional
In a large nonstick skillet, heat butter over medium high heat; saute beef and onion until beef is lightly browned. Stir in mushrooms, broth, 1/4 cup water and 2 Tbsp. parsley and seasonings; bring to a boil. Reduce heat, simmer covered until beef is tender, about 1 hour.
Meanwhile cook noodles according to package directions. Drain.
In a small bowl mix flour and remaining water until smooth; stir into beef mixture. Bring to a boil and cook and stir until thickened. Discard bay leaf and clove if desired, stir in browning sauce. Serve over noodles and sprinkle with remaining parsley.
I have a small pot roast on hand so this is what I’ll be using today. It’ll be just fine as a substitute. I have no wine so will use beef broth instead. I’m looking forward to having this dish for tomorrow.
We are having perfect weather for Trick or Treat night and it should be loads of fun tonight.
I hope you all have a SUPER Saturday!

Almighty and eternal God,
Protect our military
as they discharge their duties
with the shield of your strength,
may the power of your love
enable them to return home in safety
that with all who love them
they may ever praise you for your loving care.
AND bless our Police Officers, Firefighters and EMT’s.
We ask this through Christ our Lord.
Amen
GOD BLESS YOU ALL!

Have some sweet treats today and celebrate !
Wow! Are those real pumpkins hanging in the tree? I'm so impressed your grands are getting to enjoy a story kind of old-fashioned Halloween. And you're right there to watch their joy!
It looks like it is raining for your Halloween. I think the kids here celebrate on the 31st.
Trick or Treat. Funny that, I never heard of it until I was grown. It was not even heard of when I was a kid/teen down south. Families did not give out candy. Kids just made up costumes and wondered around town trying to guess who was what or what was who.
Boys turned over trash cans and soaped store windows. Most folks made sure their trash can was in the back yard, if it was at the curb, it was turned over. It was sort of a license to do small 'mean' tricks.
Now mean was getting some of mama's canning wax sealer and waxing windows down town. that took work to get off.
Good pictures...
