I will definitely celebrate this day. It doesn’t take a lot of money or effort to make a difference. It’s all about showing a little kindness. A hug, a smile, a word of encouragement can show some someone you care. You are never to old or too young to participate.
This is my day to cook for the weekend and on the menu today is:
Hungarian Short Ribs
Makes 8 servings
3 tbsp. Canola oil
4 lbs bone in beef short ribs
2 onions sliced
1 can, 15 oz., tomato sauce
1 cup water
1/4 cup packed brown sugar
1/4 cup vinegar
1 1/2 tsp salt
1 1/2 tsp ground mustard
1 1/2 tsp. Worcestershire sauce
1/4 tsp. paprika
Cooked wide egg noodles
In a Dutch oven, heat oil over medium high heat. Brown ribs on all sides. Add onions; cook until tender. Combine all remaining ingredients except noodles; pour over ribs. Simmer for 2 1/2 hours until meat is tender. Thicken gravy if desired. Serve over noodles.
I couldn’t find short ribs at the store this week so looked it up and they say Chuck roast was a good substitute, so that is what I’m using today. I have had short ribs before and they are delicious, hopefully this roast will be too! I’m using a 1 3/4 lb. small roast which will be plenty for me.
It’s to be an amazing sunny day with temps in the low 70’s so I’ll be spending some time outside soaking up so rays of sunshine !

I love that quote by Tom Brokaw! I can't remember ever having short ribs, but chuck roasts are delish -- a real favorite of ours. Now I know Tom would enjoy this recipe. We don't have a dutch oven, but I think it might work in the slow cooker. Enjoy your day!
