I am thankful for all the Bosses I’ve ever had because they were the ones that provided a job for me. I needed to work and a job was there for me. Most of my bosses were kind and fair, but some of them were more challenging than others. They pushed me to do more than I thought I could. So I’ll be celebrating today and thanking anyone who was ever a boss to me. I am so thankful you gave me a job.
Now I’m retired and thanks to working all those years, I live on Social Security. It wouldn’t have been possible for me to retire if I hadn’t worked.
I’m the boss of me, and I think I do a good job of it. But we all know who is really in control. I try to enjoy each day to the fullest and do the best I can with what I have.
Monday’s are always my day to cook something new to eat and on the menu today is:
Cheese Burger Soup
Makes 8 servings
1/2 lb. lean ground beef
4 Tbsp. butter, divided
3/4 cup chopped onion
3/4 cup shredded carrots
3/4 cup diced celery
1 tbsp dried basil
1 tsp dried parsley flakes
4 cups cubed peeled potatoes
3 cups chicken broth
1/4 cup flour
2 to 4 cups shredded Velvet
1 1/2 cups milk
3/4 tsp salt
1/4 tsp pepper
1/4 cup sour cream
Optonal: Onion rings and thinly sliced green onions.
In a large saucepan over medium heat, cook and crumble beef until no longer pink, drain and set aside. In same pan melt 1 Tbsp butter over medium heat. Saute onion, carrots, celery, basil and parsley until vegetables are tender. Add potatoes, ground beef and broth; bring to a boil. Reduce heat, simmer, covered, until potatoes are tender.
Meanwhile, in a small skillet melt remaining butter. Add flour and cook and stir until bubbly. Add to soup, bring to a boil. Cook and stir 2 minutes. Reduce heat. Stir in cheese, milk, salt and pepper. Cook until cheese melts. Remove from heat and blend in sour cream. If desired, serve with onion rings and green onions.
This makes a lot of soup, so I’ll cut the recipe in half, since it’s only me here.
It’s to be in the 40’s here today and partly sunny so it will be a good day for hot soup. They say we’ll be in 40’s here most of the week but by the weekend we’ll warm up in the 60’s. I can hardly wait.

I'd like to thank all the bosses I've had for giving me a job when I needed one !
I have had only one BOSS that actually did not know how to be a Boss, But I have had some of the best also. Sweet Fall, Halloween and Thanksgiving shots, it's that time of year again.........
