Balogna has been a long time favorite here at my house so I will definitely celebrate today and have a bologna sandwich for lunch! I like mine fixed like a BLT with mayo, lettuce and tomato.
I also like a fried bologna sandwich. It’s delicious. Just fry it in a pan until it’s brown and crispy around the edges then fix it like would usually do. I even had occasion to eat one in a restaurant that was famous for their fried bologna. Usually I would get something in a restaurant that I could easily make at home, but it had been recommended to me and truly it was wonderful. The bologna had been cut extra thick and had a very good flavor.
It is Monday and my day to cook something new for dinner and on the menu today is:
Spinach and Cheese Breakfast Skillet
Makes 2 servings
1 russet potato, scrubbed, skin left on
1 slice bacon
1 Tbsp.. olive oil
3 cups baby spinach
1/3 tsp salt
2 eggs
2/3 cup Cheddar cheese
Freshly ground pepper
Prick potato in serval spots with fork; microwave on High 4 minutes. Let cool for 5 minutes, then chop in to 1/2 slices.
Meanwhile cook bacon over medium high heat in a cast iron skillet until crisp. Add oil and diced potatoes and cook, stirring frequently, until the potatoes are browned. Add spinach; stir to combine and just wilt about 1 minute. Season with salt.
Make 2 wells in the center of the has and crack one egg into each well. Reduce the heat to medium and cook until the eggs are partially set. Sprinkle with cheese and cover until cheese is melted and the egg whites are completely set.
Chop the bacon and sprinkle on top. Garnish with a generous grinding of pepper.
I love having breakfast for dinner. This is a healthier hash to eat due to the addition of spinach.
We’re having another wonderful summer like day here again. The weekend couldn’t have been more beautiful and for two more days our temps will be in the 70’s.
I couldn't find any pictures of bologna today, but I do have a lot of some of the grands carving their pumpkins.

YES like all NEW families there were many bologna (Baloney) sandwiches. Also mama & Sherry made some good 'fried baloney' sandwiches. My favorite is simply baloney, lettuce, tomato on white bread with mayo. Later in life I added onion. LOL

Yesterday I had some bologna in the freezer and I sat it outside on a table to thaw. I have been so hungry for a bologna and cheese sandwich! I used to eat fried bologna when I as a kid and now I am planning on fixing some for breakfast in the morning at the ranch! Bologna and eggs and toast!

Bologna was always part of our sandwich feasts. Before we married, I took John to my parent's house. John and my brother Bill took white bread and bologna upstairs. When our kids were young, bologna was a staple.
While going to school, bologna was a staple in my weekday lunch sacks. I never heard of fried bologna until Tom fixed it one day but have to admit it was delicious. Comfort food!
