This granddaughter’s birthday is another one of my long distance celebrations, but a card will be sent out to her with love and birthday wishes.
I happen to be able to live where I have a wonderful shelter that is warm and dry and have all the utilities I need. Gas, water and electricity are readily available. So I will celebrate this day. We do have a caring community that is always looking out for those in need. I like to donate any extra food, clothing or blankets I have on hand. If I’m no longer using something, there will be someone else that can use it.
Our church takes up a monthly collection just for the poor and gives the money where and when it is needed. I try to donate when I can because there was once a time when I needed help and they generously gave it.
We’re starting off this week with partly cloudy skies, which also means it will be partly sunny. We’ll warm up a bit until Thursday, but then it will cool off again putting temps back into the 50’s
It’s my day to cook up something new and on the menu is:
Creamy Chicken Noodle Soup
Makes 8 servings
2 Tbsp. Butter
1 Tbsp. olive oil
2 cups chopped onion
1 cup chopped carrots
1 cup chopped celery
1 3/4 tsp. salt
3 Tbsp flour
4 cups chicken stock
2 cups milk
4 oz uncooked egg noodles
3 cups chopped rotisserie chicken breast
1 cup frozen green peas
Melt butter with olive oil in a large Dutch oven over medium high heat. Add onions carrots, celery and salt an cook stirring often, until vegetables are slightly softened. Add flour and stir to coat. Stir in broth and milk and let mixture come to a boil. Add uncooked noodles to boiling mixture. Cover and cook until noodles are al dente. Stir in chicken and peas and cook until pasta reaches desired doneness and chicken and peas are warmed through. Serve immediately.
This soup will have a chicken pot pie feel to it. You can pair this soup with a green salad or if you’re really hungry, a grilled cheese sandwich.
For me, I think the soup itself will do, it has everything we need in it. However, I will be cutting the recipe in half because it makes so much.
