I’m not Canadian, but will celebrate today because I believe we should be thankful for what we have everyday. Every day is a gift to each one of us and there is always something to be thankful for no matter what.
I’ve been keeping track of what I’m thankful for each day for quite a few years now and list 3 things I’m thankful for each day.
Today I’m thankful for another occasion to tell each one of you just how important you are to me. I’m very thankful for each one of you ! You are all so special to me.
I’m looking forward to our own Thanksgiving celebrated here in the USA. Once again most of my family members will be gathering together in celebration!
It’s only October, but it’s not to early to start making plans, I hope everyone will be able to come. It’s such a blessing all the restraints we had during covid have been lifted and we can get together again in large groups.
I’ve been triple boosted and have my flu shot too, so I feel safe to be in a large group once again.
It’s my day to cook something new to eat and on the menu is:
Taco Corn Bread Casserole
makes 8 servings
2 lbs lean ground beef
2 envelopes taco seasoning
2 cans, 14.5 oz. each, diced tomatoes, drained
1 cup water
1 cup cooked rice
1 can, 4 oz., chopped green chilies
2 packages cornbread muffin mix
2 can, 8 3/4 oz. whole kernel corn, drained
1 cup sour cream
2 cups corn chips
2 cups shredded Mexican cheese blend, or cheddar cheese, divided
1 can, 2 1/4 oz., sliced ripe olives, drained
Optional shredded lettuce, chopped tomatoes and chopped red onion
Preheat oven to 400 degrees. In a Dutch oven, cook beef over medium heat until no longer pick, breaking into crumbles. Drain. Stir in taco seasoning. Add tomatoes, water, rice and green chillies if desired. Heat through, stirring occasionally.
Meanwhile prepare cornbread mix according to package directions, stir in corn. Pour half the batter in a greased baking dish. Layer with half the meat mixture , all the sour cream, half the corn chips and 1 cup of cheese . Top with remaining batter, remaining meat mixture and olives.
Bake uncovered, until cornbread is cooked through, about 60 minutes. Sprinkle with remaining 1 cup of corn chips and 1 cup of cheese, bake about 5 minutes longer until cheese is melted. If desired serve with lettuce, tomatoes and red onion.
This dish sounds delicious to me and it’s a good day to turn the oven on. I’ll probably cut this recipe in half because it makes so much. It’s to be sunny today, but our high will only be 64 degrees they say.

Yes, Canada, Happy Thanksgiving. My sister livd in Canada for a few years. The family enjoyed celebrating with their neighbors. She even learned the 'new to them' weather temps and meat weights in kg. ;-)
