I think I’m happy with who I am and what I have. I have no regrets for anything I’ve done and plan to continue living my life to the fullest. Taking each day as it comes and enjoying it to the fullest.
Each day is such a gift, it should be appreciated for what it is.
This is my day to make up a new menu for next week and to make a list to do my grocery shopping from.
Monday- Spinach and Cheese Breakfast Skillet
Wednesday - Mexican Style Stuffed Peppers
Friday - Loaded Sweet Potato Nacho Fries
Weekend - Beef Burgundy Over Noodles
On my menu for today is:
Meatloaf from the Slow Cooker
Makes 8 servings
1/2 cup tomato sauce
2 eggs, lightly beaten
1/4 cup ketchup
1 tsp Worcestershire sauce
1 onion, chopped
1/3 cup crushed saltines, about 10 crackers
3/4 tsp. minced garlic
1/4 tsp seasoned salt
1/8 tsp. pepper
1 1/2 lbs lean ground beef
1/2 lb. bulk pork sausage
Sauce:
1/2 cup ketchup
3 Tbsp. brown sugar
3/4 tsp. ground mustard
1/4 tsp ground nutmeg
Cut three 25 by 3 inch strips foil criss cross so they resemble spokes of a wheel. Place strips on the bottom and up the sides of the slow cooker. Coat strips with cooking spray.
In a large bowl, combine the first 9 ingredients. Crumble beef and sausage over mixture and mix lightly, but thoroughly. Shape into a loaf place in the center of the strips.
In a small bowl, combine all sauce ingredients. Spoon over meat loaf. Cover and cook on low 4 hours or until no pink remains and a thermometer reads 160 degrees. Using foil strips as handles, remove meatloaf to a platter.
I would usually save this recipe for a summer day when I didn’t want to turn the oven on, but since I’m going to be out shopping, this will be the perfect way for it to cook while I’m out.
I’ll have to cut this recipe in half since it makes enough to feed 8 and I’ll still have leftovers for tomorrow.
It’a been very windy and cold out making it feel like 30 degrees, so I’ll be bundling up today when I go out. I have a long sleeve turtle neck on covered by a vest and will have my coat on over it. Hopefully I’ll stay warm.

SWEET entry. I enjoyed the visit and the use of the road and the older cars to illustrate your point. Of course I would love it (smile). WE do need to contemplate our lives and our decisions.
