THOUGHT FOR TODAY

Everyone loves homemade cookies and that includes me. I don’t bake much anymore since there is only me to eat whatever I make. When I know I’ll have someone to share them with, then I’ll bake. Chocolate chip is one of the favorites in my family, but my favorite cookie is Pecan Sandies. I love nuts in my cookies, but the kids not so much.
This is the day I cook for the weekend and on the menu is:
Slow Cooked Ham with Pineapple Sauce
Makes 12 servings
1, 5 lb. cooked boneless ham
1 Tbsp cornstarch
2 Tbsp lemon juice
1 cup packed brown sugar
1 Tbsp yellow mustard
1/4 tsp salt
1 can, 20 oz. crushed pineapple, undrained
Place ham in slow cooker, In a small pan, mix cornstarch and lemon juice, stir until smooth. Stir in remaining ingredients, bring to a boil, stirring occasionally. Pour over ham, covering completely.
Cook covered on low 8 heat or until thermometer inserted in ham reads at least 140 degrees.
A serving is 4 oz ham with 1/4 cup sauce.
I’m using some ham slices I have on hand today. I have put pineapple slices on my ham before but this is the first time I’ll be making the sauce. I sound delicious to me. I have some potato salad to have along with it as well as a side of corn on the cob.

Okay I smiled at the # of things represented by October. And then home made cookies day. We don't do much cookies around here any more. But Sherry did make some RAsin bran muffings, that is close to a cookie. LOL all your recipes sound delicious. Always enjoy the pictures.
