Happy Halloween all ! We had our Trick or Treat Day here on Saturday, but that doesn’t mean there still won’t be some Ghosts and Goulies around today. Beware on Halloween Night !
The only ones I’m expecting to come to my door are our friendly maintenance men. They are coming to do a winter heat check on my home. They check to make sure everything is working well here and they change the batteries on my smoke alarm and the carbon monoxide alarm as well. They also change the furnace filter and make sure the heat tape on my pipes is working so they won’t freeze up when cold winter comes.
I am also hoping to see the yard man come by so a final mowing of my yard can be done, but so far I haven’t heard a thing on that one. Well today it’s supposed to rain so that probably that won’t happen for sure. One way or the other it’s assured I’ll be a asleep at the midnight hour when the ghosts appear.
It’s Monday and my day to cook up something new to eat.
On the menu for today is:
Chicken and White Bean Soup
Makes 6 servings
2 tsp olive oil
2 leeks, white and light green parts only, cut into 1/4 inch rounds
1/4 tsp dried sage
2 14.oz cans chicken broth
2 cups water
1 15 oz can cannellini beans, rinsed
4 cups shredded and cooked chicken meat
Heat oil over medium high heat. Add leeks and cook, stirring often until soft. Stir in sage and continue cooking until aromatic . Stir in broth and water, increase heat to high, cover and bring to a boil. Add beans and chicken and cook, uncovered, stirring occasionally, until heated through. Serve hot.
I will be using great northern beans here in my soup today as they are what I have on hand. Otherwise I’ll fix the soup following the recipe.
It sounds delicious and perfect for a wet and rainy day.
Thankfully I have no reason to venture outside today, I’m staying in and keeping dry.
