Today is TV Dinner Day which celebrates a piece of American history that changed our way of eating..
In 1953 the C.A. Swanson and Sons introduced a new product called a TV dinner and changed the prepackaged meal industry forever. The Smithsonian Institute inducted the original Swanson TV Dinner tray into the Museum of American History in 1986.
The term TV Dinner is now synonymous with any prepackaged, frozen meal that requires little preparation and contains an entire single serving meal. Modern day TV dinners can be cooked in the microwave instead of the oven and include gourmet recipes as well as organic and vegetarian dishes.
To celebrate today go to your local supermarket or place a curbside pick up order for some old fashioned TV dinners for your family.

I make use of TV Dinners here when I don’t feel like cooking. I’d do it more often except for the fact that they usually have a lot of salt in them which is not a part of my healthy diet these days.
Cooking for one usually means I have a lot of leftovers and truthfully, I could make up my own homemade TV dinners by putting those in a tray in the freezer. Having leftovers is a way to keep from having to cook something new every day.
Today is my day to cook up something new and it won’t be a TV dinner instead I’ll be having:
Sheet Pan Chipotle Lime Shrimp
Makes 4 servings
1 1/2 lb. baby red potatoes cut into 3/4 inch cubes
1 tbsp. olive oil
3/4 tsp. sea salt
3 limes,
1/4 cup butter, melted
1 Tsp. ground chipotle Pepper .
1/2 lb. fresh broccoli, cut into small florets
16 to 20 uncooked shrimp, Peeled and deveined
2 tbsp cilantro
Preheat oven to 400 degrees . Place potatoes in a greased baking dish, drizzle with olive oil, Sprinkle with 1/4 tsp sea salt, stir to combine. Bake for 30 minutes. Meanwhile squeeze 1/3 cup juice from limes. reserving fruit. Combine the lime juice, melted butter, chipotle and remaining salt.
Remove pan from the oven, stir potatoes. Arrange brocolli shrimp and reserved limes on top of potatoes. Pour lie juice mixture over vegetable and shrimp.
Bake until shrimp turns pink and vegetables are tender. About 10 minutes longer. Sprinkle with minced fresh cilantro.
I don’t have baby red skin potatoes but will use the Yukon Gold Potatoes I have on hand. I’ll also using Chili Powder and a little paprika instead of the Chipotle Pepper

Take a break from cooking today and enjoy a TV dinner.
I remember when Swanson TV dinners first came out ... pot pies, too! If memory serves, my mother used to buy when they went on sale - 10 for $1! All the many 'tv dinner' choices now days, I saw something similar at our grocer's frozen food section for $3.29. Say it ain't so!
