Today is also National Peanut Butter Day, which is a celebration of the peanut that really isn’t a nut at all. Technically peanuts are legumes, simple dry fruits of the same family as peas and beans.
George Washington Carver discovered over 300 practical uses for peanuts. Carver a graduate of Ioaa State university, found ways to use peanuts in shampoo, fuel, dyes, and flours. Ironically historians suspect Carver never dated a peanut butter and jelly sandwich.
To celebrate today, bake peanut butter cookies, watch a ballgame with a bag of whole peanuts, enjoy a nice chunk of penut butter fudge, or make a peanut butter and jelly sandwich for lunch.

THOUGHT FOR TODAY
As usual this granddaughter’s birthday will be a long distance celebration for me, but a card with love and birthday wishes will be sent her way.
I often have a peanut butter sandwich fortune ao I will be celebrating the holiday. Peanut butter is good and good for us too. It’s full of protein.
My youngest son ate nothing but peanut butter sandwiches his first year of school. He never got tired of them. The lunch lady told me that he was not eating the lunches I bought him and when I ask him why he said he didn’t have time to eat them. So I started packing his sandwich ever day and he did have time to eat that.
I also like to dip apples or celery and carrots in peanut butter for a healthy snack.. They go very well together.
It’s Monday and my day to cook so on the menu today is:
Chili Con Carne
Makes 10 servings
2 lbs lean ground beef
2 tbsp. olive oil
2 onions, chopped
2 cloves garlic, minced
1 medium green pepper, chopped
1/1/2 tsp.salt
2Tbsp. Chili powder
3 tsp. beef bouillon granules
1/8 tsp cayeenne pepper
2/4 tsp cinnamon
1 tsp ground cumin
1 tsp dried oregano
2 cans diced tomatoes, undrained
1 cup water
1, 16 oz. can kidney beans rinsed and drained
Optional: Sour cream and grated cheddar cheese
In a Dutch oven, cook beef over medium heat until no longer pink. Crumble beef. Drain and set aside
In same pot, heat oil, saute onions until tender. Add garlic and cook a minute longer. Stir in the green pepper, salt, chili power, bouillon, cayenne, cinnamon, cumin and oregano. Cook for 2 minutes,
Add tomatoes and browned beef. Stir in water. Bring to a boil. Reduce heat and cover and simmer about 2 hour. Add beans and heat through. If desired serve with sour cream and cheddar cheese.
I like to used crushed tomatoes instead of the diced tomatoes in my chili, but that was the only change I made to this recipe. It’s pretty close to the way I usually make it anyway. Although I’ll only make half the recipe because it makes a lot.
I usually wait until it is cooler to fix chili for dinner, but it’s still in the 80’s here. I was just hungry for it so it won’t matter that its not cool out.
I haven’t had it in a long long while.
