Today is National Chocolate Milk Day which celebrates a beverage with surprisingly restorative properties. The dairy industry conducted a study and discovered that chocolate milk helps athletes with muscle recovery. It provides nine essential nutrients, making it both delicious and nutritious.
Until the 1820’s drinking chocolate was fairly uncommon and no one knew how to produce a smooth chocolate taste in liquid form. In 1828 the Van Houten company in Amstserdam, invented the cocoa pressing method. This produced a light, fluffy chocolate powder that could easily be dissolved in water or milk. Today chocolate milk is a popular beverage for people of all ages.
To celebrate today, pour yourself a nice tall glass of chocolate milk in honor of the day.

I don’t have chocolate milk very often, but some of my grandchildren love it. I keep hershey’s chocolate syrup on hand to make it for them.
In my opinion anything with chocolate in it is good. It’s been proven that a certain amount of chocolate can also be very good for us too.
But on my menu for today is:
Stuffed Acorn Squash
Makes 5 servings
3 acorn squash
5 oz bulk turkey sausage
1 onion chopped
1/2 medium red bell pepper chopped
1 clove garlic minced
1 tsp chili powder
1 tsp. ground cumin
2 cups chopped celery
2 cups chopped cherry tomatoes
1 15 oz. can black beans, rinsed
Several dashes of hot red pepper sauce, to taste, optional
1/2 tsp salt
1 cup shredded swiss cheese
Preheat oven to 375 degrees. Lightly coat a large baking sheed with cooking spray.
Cut squash in half horizontally. Scoop out and discard seeds. Place the squash cut side down on the baking sheed. Bake until tender. About 45 minutes.
Meanwhile coat a large skillet with cooking spray; heat over medium heat. Add sausage and cook, stirring and breaking up with a wooden spoon until lightly browned. Add onion and bell pepper, cook stirring often until softened. Stir in chili powder and cumin; cook for 30 seconds more. Stir in tomatoes beans, salt and hot sauce, scraping up any browned bits. Cover and reduce heat, and simmer until the tomatoes are broken down.
When squash is tender, reduce oven temp to 325 degrees . Fill the halves with the sausage mixture. Top with cheese. Place on the baking sheet and bake until filling is heated through and cheese is melted.
I will only be using 1 acorn squash which will still make 2 servings for me. I don’t have cherry tomatoes so will use some diced tomatoes instead. I also didn’t have grated swiss cheese on hand so simply will place a slice of swiss cheese on top of each half..
They say it’s to be warmer today in the 80’s but I use a toaster oven anyway, so it’s never as hot as turning on the big oven in the stove. The rest of the week is supposed to be in the 70’s and quite fall like.
This will be our last really warm day for awhile.

Happy Fall Y'All!
I think chocolate milk is definitely comfort food material. Back in my 20's, I used to stop at a little convenience store near my office every morning for a pack of cigarettes and a pint carton of chocolate milk. (Then, of course, I began putting on weight and had to stop. Darn.)
That acorn squash sounds divine! I tried making some in my InstantPot last year -- with lackluster results. Try, try again!
