Today is Salami day which celebrates a a cured sausage that has been fermented and air dried. Countries like Italy, France Hungary, Germany and Spain each produce their own style of salami
The varieties differ in the coarseness or fineness of the chopped meat as well as the size and style of the casing.
Although the exact origin is unknown, there is evidence that fermented sausage has been made in the Mediteraneanea area for more than 2000 years. Both the Romans and Greeks cured their meat so that the final product could be stored at room temperature for up to 10 years without going bad.
The way in which salami is fermented has many natural health benefits. For example the final product contains lactic acid bacteria, which can maintain a healthy dgestsivse system.
To celebrate today enjoy some delicious salami on a sandwich, in a salad or on its own. Enjoy !

. More than not I like my salami sliced with cheese and eaten on crackers, but I also enjoy it in a sandwich. Here locally they sell a sanchwich known as a Roman Burger that is very good. It includes a grilled burger and a slice of salami with provolone cheese. I don’t buy them but make my own.Here’s the recipe if you’d like to try them
Roman Burgers
1 loaf Itslian Submarine or Hoagie Bun
1 tbsp. butter
1 Tbsp. Mayonnaise
1/4 cup shredded lettuce
2 slices tomato
2 slices white onion
2 Tbsp. Italian Dressing
2 1/4 lb..hamburger patties
2 slices Provolone Cheese
Split a Hogie Sub, spread with butter and grill for toasting
Spread mayo on both sides of sub.
On the bottom part of the sub layer lettuce tomato and onion.
Drizzle Italian dressing on both sides and set aside.
Grill burgers and add provolone slices on each burger before removing from gtill. Place on hoagie.
Place salami on the grill and flip on both sides to cook evenly.
Place salami on top of the cheeseburgers.
Asssemble sandwich and press together to get the flavors together.
Cut n half and serve.
One way or the other I’ll be celebrating salami day with one if not both of them. A snack or a sandwich.

Tom loves salami -- and burgers, but I'll bet he never thought of putting them together. I'm going to ask him. Provolone cheese is one of our favorites!
