Today is National Cherries Jubilee Day.which celebrate a classic flambe’ dessert made with cherries and brandy, served over vanilla ice cream..
The original recipe is attributed to French chef Auguste Escoffie who prepared the dish for one of Queen Victoria’s jubilee celebrations. It is unclear whether it was the Golden Jubilee ore the Diamond Jubilee in 1897, but it quickly became a fashionable dessert of the era. For many years, cherries jubilee was popular dessert in American’s finest restaurants, reaching the peak in the 1960’s .
To celebrate today make this dessert for your family and impress them.

I have cherries and vanilla ice cream but no brandy, so my dessert fo today won’t be flammable. But still enjoyable for sure.
I have some cherry pie filling that will do nicely for my ice cream topping.
It’s Friday and my day to cook and on the menu today is:
The Ultimate Fish Tacos
Makes 6 servings
1/4 cup olive oil
1 tsp ground cinnamon
1 tsp paprika
1 tso salt
1 ts. pepper
6 talipia or maki fish fillets
12 corn tortillas
2 cups chopped red cabbage
1 cup chopped fresh cilantro
Salsa verde, optional
2 medium limes cut into wedges
Hot pepper sauce, optional
In a 9 inch baking dish, whisk the first 5 ingredients. Add fillets and turn t o coat. Bake covered 30 minutes
Drain fish and discard marinade. On an oiled grill rack, grill fish covered, or broil on medium high heat 4 inches from heat until it flakes easily with a fork. Remove fish. Place tortillas on grill rack heat 30 to 45 seconds. Keep warm
To assemble, divide fish among the tortillas; layer with red cabbage, cilantro and if desired salsa verde. Squeeze a litle lime juice and hot pepper sauce over fish mixture; Fold sides of tortillas over mixture. Serve with lime wedges and additional pepper sauce.
I don’t like any thing to spicy, so I won;t be using hot pepper sauces .The pictures today are of DS#6, his wife and daughter having some fall fun.

PRAYER REQUEST
I’m requesting prayers for my youngest son, DS#6, who found out that after being cancer free for 20 years, his cancer has returned and he will be having surgery next Wednesday to remove it. The doctor is hopeful that it is contained in one area and hasn’t spread to any other place in his body. So please pray that DS#6 has a successful surgery and is once again cancer free. They will be doing follow up tests to make sure it hasn’t spread anywhere else.
Prayers too for his doctor that he will be guided as he performs surgery to do the best possible for my son.
I pray all this in Jesus name. Thy will be done. Amen.
