Today is Linguine Day which celebrates a long flat narrow type of pasta. It is often misspelled linguini . It’s most commonly used in seafood or pesto dishes such as linguine alle vangole, linguine with clams.
Linquine which means little tongues in Italian originated in the Liguria region of Italy. Take a moment to imagine you’re at one of the local trattorias taking in the wonderful aromas of good healthy pasta dishes.
To celebrate today have a linguine dish to have in honor of the day

It is a comfort to always find pasta in the cupboard and garlic and parsley in the garden.

I love pasta dishes and have them quite often. Linguine is always ia staple on my pantry shelf. But for today I have something else in mind for dinner tonight.
On the menu for today is:
Chicken and Rice Casserole
Makes 12 servings
4 cups cooked white rice
4 cups diced cooked chicken
1/2 cup slivered almonds
1 onion, chopped
1 package 10 0z. frozen peas, thawed
3/4 cup chopped celery
1 can, 10 3/4 oz. condensed cream of celery soup, undiluted
1 can condensed cream of chicken soup, undiluted
1 cup mayonaise
2 tsp. lemon juice
1 tsp. salt
2 cups crushed potato chips
Paprika
Preheat oven to 350 degrees. In a greased casserole combine first 7 in gradients. In a large bowl combine soups mayonaiase, lemon juice and salt. Pour over chicken mixture and toss to coat.
Sprinkle with potato chips and paprika. Bake until heated through, about 1 hour.
This is a great recipe for using up leftover chicken which I happen to have on hand. As it make enough servings for a large group, I will cut the recipe in half.
Today is my day to make up the menu for next week so that I can do my grocery shopping.
On the menu for next week is:
Monday -Spicy Sausage and Rice Skillet
Wednesday-Breaded Mustard and Sage Pork Cutlets
Friday- The Ultimate Fish Tacos
Weekend - Turkey Thyme Stuffed Peppers
Today is supposed to be a rainy day here which will also bring us a little cooler weather. Hopefully I’ll get the shopping done without getting wet.
