Today is also Constitution Day, or Citizenship Day which is an American federal observance that recognizes the ratification of the United States Constitution and those that have become U.S. citizens. It is observed on September 17th, the day the U.S. Constitution Convention signed the Constitution in 1787.
The law establishing the holiday was created in 2004 with the passage of an amendment by Senator Robert Byrd to the Omnibus spending bill of 2004. Before the law was enacted the holiday was known as Citizenship Day. In addition to renaming the holiday the act mandates that all publicly funded educational institutions provide educational programming on the history of the American Constitution.On that day in May 2005 the United States Department of Education announced the enactment of this lay and that it would apply to any school receiving federal funds of amy kind. This holiday is not observed by granting time off work.
When Constution Day falls on a weekend oher holiday, schools and other institutions observe the day on an adjacent week day.

I’m proud to be a citizen of the United States so will be celebrating this holiday in more than one way. I think it’s important that we all know what our Constitution has to say. The wise men that wrote it made it so it’s still relevant for today.
As I mentioned before, this grandson’s birthday is a long distance occassion for me. I won’t be able to see him but maybe I can talk to him on the phone. He lives very far away and the last time I got to see him was at Christmas over a year ago now. This Christmas will make two years. But a card will be going out in the mail with lots of love and birthday wishes for him. It’s so hard when they live far away and I do miss him. He and his brother are known as my Sunshine Boys and have always brightened my days.
Today is my day to cook something new and on the menu is:
Baked Fish and Rice
Makes 4 servings
1 1/2 cups chicken broth
1/2 cup uncooked long grain rice
1/4 tsp. Italian seasoning
1/4 tsp. garlic powder
3 cups frozen chopped brocolli, thawed and drained
1 Tbsp. grated parmesan cheese
1 can french fried onions, divided
1 lb. tilapia or cod
Dash of paprika
1/2 cup shredded cheddar cheese
In a large saucepan combine the broth, rice, italian seasoning and garlic powder. bring to boil. Transfer to a baking dish and bake at 375 degrees for 10 minutes. Add the broccoli, pramesan cheese and half of the onions. Top with fish fillets, sprinkle with paprika
Cover and bake 25 minutes or until the fish flakes easily with a fork. Uncover, sprinkle with cheddar cheese and remaining onions. Return to oven and bake until cheese is melted.
I will use fresh broccoli for this recipe since I happened to have some on hand. I love the taste that the French fried onions give to the dish.Minute rice will also work if that’s all you have.
