ON THE BRIGHT SIDE
SATURDAY, SEPTEMBER 18TH, 2021
The moments our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Today is National Cheeseburger Day which celebrates cheeseburgers that happen to be a staple at restaurants and backyards all across the country.
It’s the perfect day to grill or head out to your favorite restaurant for a cheese burger.
There are several theories about the origins of the cheeseburger. One story claims that the cheeseburger was created between 1924 and 1928 by a chief named Lionel Sternberger. As the story goes, a homeless man dining at his restaurant in Pasadena, California, suggested the addition of a slice of cheese to his hamburger order. Sternberger complied, and eventually added it to his menu, the rest is history.
To celebrate today enjoy a delicious cheeseburger in honor of the day!
If you can't see the bright side, polish the dull side
THOUGHT FOR TODAY
Man who invented the hamburger was smart; man who invented the cheeseburger was a genius.
Matthew McConaughey
I love cheeseburgers and have found some all ready made in the freezer department of the store. They are called Angus Cheeseburgers and only take a minute and a half to warm up in the microwave. I can recommend them, they are delicious and so easy to fix. They are my new go to dinner when I don’t want to cook.
But I do have something different on the menu for today as it’s my day to cook for the weekend and that is :
Slow Cooker Apple Pork Roast
1 boneless pork loin 2 to 3 lbs.
1/2 tsp. salt
1/4 tsp pepper
1 tbsp. vegetable oil
3 medium apples , peeled and sliced
1/4 cup honey
1 red onion, halved and sliced
1 tbsp cinnamon
Sprinkle roast with salt and pepper. In a large skillet, brown roast in oil on all sides.Cool slightly. With a pairing knife, cut about sixteen 3 inch deep slits in the sides of the roast. Insert one apple slices tin each slit.
Place half of remaining apples in a slow cooker. Place roast over apples. Drizzle with honey, top with onion and remaining apples. Sprinkle with cinnamon.
Cover and cook on low for 6 to 8 hours until meat is tender. Remove roast and apple mixture. Keep warm.
Transfer cooking juices to a small pan, bring to a boil cook until liquid is reduced by half.Serve with pork and apple mixture. Sprinkle with parsley if desired.
It’s too warm here to turn on the oven but a slow cooker is the perfect remedy to fixing a roast for the weekend.
I hope you all have a SUPER Saturday!

Enjoy a burger today in honor of the occassion!
I LOVE hamburgers but not cheeseburgers....go figure.
I, too, love a good burger ... and so many topping choices. On last night's Diners and Dives they featured a place (in Portland?) that served theirs with a bone-marrow aoili topping.
This apple roast recipe sounds like something perfect for company!
