Today is the Fall Equinox. It’s the first full day of the fall so get ready for changing leaves and cooler weather. Meteologically speaking fall began on September 1st, but the fall equinox marks astronomical start of the season.
Equinox refers to the date or time at which the sun crosses the celestial equator,and making day and night equal length. There are two equinoxes each year on September 22nd or 23rd and March 20th or 21st.
Once the fall equinox begins, daylight in the Northern Hemisphere will diminish until the winter solstice. The opposite occurs in the Southern Hemisphere .
Celebrate today with some of your favorite fall activities . Take a drive to view fall foliage, get out into nature, or simply take a neighborhood walk to enjoy the crisp air.

I’ve been celebrating fall since September 1st, but today it’s officially the Fall Equinox and Summer is over and won’t be back again until next year. We say goodbye to summer and welcome Fall.
While I do enjoy summer days, I’m ready for the cooler days of Fall. and just like that, our days have suddenly turned cool. After being in the 80’s, today we’ll be in the 60’s. It’s time for sweaters or maybe even a jacket. I will be going out shopping today and will make sure to take one along with me.
It’s also my day to make up a menu for next week.
Monday - Stuffed Acorn Squash
Wednesday - White Chicken Chili
Friday - Garlic Toast Pizza
Weekend - Makeover Beef Stroganoff
On the menu for today is:
Breaded Mustard and Sage Pork Cutlets
makes 4 servings
1 egg
1 tbsp. milk
2 tbsp dijon mustard
3/4 cup breadcrumbs
13/4 cup mashed potato flakes
2 tsp. ground mustard
2 tsp. minced frsh sage
1/3 cup flour
8 thin boneless pork loin chops
1/2 tsp salt
4 tsp vegetable oil
In a shallow bowl, whisk egg, milk and dijon mustard. Mix bread crumbs , potato flakes, ground mustard and sage. Place flour in yet another shallow bowl. Sprinkle pork with salt.
Dp chops into the four to coat both sides, shake off excess. Dip in egg mixture, then in bread crumbs. Patting to help coating adhere .
In a large skillet heat 2 tsp oil over medium high heat. Add chops and cook on each side until a meat thermometer reads 145 degrees. Adding more oil needed.

Welcome Autumn! Our temps are still in the high 70's but I can hardly wait for an opportunity to wear my oversize hoodies. It's the most wonderful time of the year!
