Today is International Literacy Day which highlights the status of literacy and adult learning globally. There are now almost 4 billion literate people in the world, but universal literacy remains an elusive target. One in six adults not still not literate and more than 7 million children are out of school.
In 1965 the United Nations Educational, Scientific and Cultural Organization, UNECO, designated Septwer 8th as International Literacy Day. It has been observed since 1966.
To celebrate today, make sure you keep learning and growing and help others to do the same.

I don’t think we ever get too old to learn. The older I get the more there is to know. It’s back to school time for us, but sadly not everyone in the world has a school to go to. I’m so thankful to be living in a country where education is plentiful and schools are everywhere.
If you are not literate, you cannot live your life fully. I cannot imagine not being able to read or write. Reading is one of my favorite things to do. Matter of fact I read more than I do most anything else. Books keep me entertained and also educate me in more ways than I can count.
It’s once again that time of week when I make up a new menu and make up my shopping list for the week. We are expecting a mostly cloudy.day here with only a slight chance of showers so it should be a nice day to go shopping.
On the menu for next week is:
Monday - Chili Con Carne
Tuesday- All American Meatloaf
Wednesday - Chicken and Rice Casserole
Firday- Baked Fish and Rice
Weekend - Slow Cooker Apple Pork Roast
On the menu or today is:
Sweet and Smokey Pulled Pork Sandwiches
Makes ;10 servings
1/3 cup liquid smoke
3 tbsp. paprika
3 tsp. salt
3 tsp pepper
1 tsp garlic powder
1 tsp. ground mustard
3 lbs pork shoulder roast
1 bottle, 18 oz. barbecue sauce
10 hamburger buns, split
In small bowl, whisk the first 5 indents, rub over roast. Place roast in a slow cooker. Cook covered on low 8 to 10 hours
Remove roast, coal slightly. Discard cooking juices. Shred pork with 2 forks, return to slow cooker. Stir in barbecue sauce. Heat through. Serve on buns.
I had leftover roast in the freezer so I don’t have to cook this for 10 hoirs. And it’s not 3 pounds but less. This rsecipe makes enough for a crowd.

My book shelves are all of books that I've already read, but want to read again.
You have the best menus!!
I'm a reader! Alwasy have been. I read to Louis Dean every morning. Right now we are reading Dunkirk and he loves war stories. Guess that's a man thing!
He is a life long learner and is now teaching himself to play the violin. I think that's what is keeping him so 'young' at nearly 85.
My DIL makes the best pulled pork in her slow cooker! I need to see if she uses pork shoulder or Boston butt. My Tom and I used to love spending afternoons with our books; I'm hoping since his surgery and new Walgreens 'readers' that he'll enjoy doing so again.
