Today is National Welsh Rarebit Day which celebrates toast with hot cheese poured over it. It is a popular pub snack.
The origins of this dishes’ name are unclear.. The Welsh term, rarebit most probably means rabbit. The title is likely just a fun poke at the dish and those that eat it, much the say way that mock turtle soup isn’t made from turtles.
Welsh rarebit is a popular dish across Europe and in certain parts of the rest of the world. If you’ve never had it before, today would be the perfect opportunity to try it for the first time.

I prefer my cheese toasted between two slices of bread, so I probably won’t try this dish out today. It might be worth trying but on the menu today is
Shrimp and Spinach Salad
Makes 6 servings
1 1/3 lbs. Uncooked shrimp, peeled and deveined
1 tsp Montreal steak seasoning
4 bacon strips, chopped
1 finely chopped shallot
1/3 cup cider vinegar
1 tbsp. olive oil
1 tsp. Dijon mustard
1/2 tsp. sugar
1/2 tsp salt
1/4 tsp. pepper
10 oz package of fresh spinach
3/4 cup julienned roasted sweet red peppers
1/4 cup sliced almonds
Sprinkle shrimp with steak seasoning. On 4 metal or soaked wooden skewers, thread the shrimp. Grill covered over medium heat or broll 4 inches from heat until shrimp turns pink, 2 to 3 minutes on each side.
Meanwhile in a large skillet, cook bacon over medium heat until crisp. stirring occasionally . Remove with a slotted spoon; drain on paper towels . Discard all but 1 tbsp of drippings. Add shallot, cook and stir over medium heat until tender. Stir in next 6 ingredients. Bring to a boil then remove from heat.
In a large serving bowl, combine spinach and dressing; toss to coat. Layer with shrimp and pepper slices; top with cooked bacon and almonds.
You could also toss spinach in the dressing before removing it from the heat for 15 to 20 seconds, and stir constantly. I love wilted salads with bacon dressing and this sounds delicious.

I think I middle-aged before realizing Welsh Rarebit wasn't rabbit! I do love cheese of any kind, but this doesn't sound especially tempting. Better, your wilted spinach and bacon!
